I do not think that olive oil is particular good here, because it oxides. Any cheap soya oil would be better or any other technical oil.
The constructions I saw with the electronic parts in oil have in point of view a weak point: The HDD is not sufficiently cooled, often even mounted on a piece of wood. So it would be a good idea to place the HDD outside the oil, but to provide via some metal a path for the head produced by the HDD to find its way into the oil.
