I will be spending about £5728.......Yes I know it's a lot of money but I have been saving hard for the last 4 years and it will likely change when finally ordering it this December. But that's the spec I am aiming to get it will be running on a 24inch wide-screen monitor and apparently according to the site sales people will run most games at about 200-250fps.......nuff said!

You are probably waisting a lot of that mainly because you will either not be able to perceive certain performance characteristics (such as the fps) or will not be able to realize them due to technological constraints of certain components of the system.
You may want to look into the performance differences between the first generation i7's and the second generation i7's (Intel Sandy bridge), which have already started coming out. They are a 3rd of the price if the i7-990X

Point taken won't be buying it till December as it is anyway but that's pretty much what I want but money is none issue I mean can't take it when I go can I so may as well use it now and get something I will enjoy the FPS was done on benchmarks so they know it could run those speeds.

You may want to look into the performance differences between the first generation i7's and the second generation i7's (Intel Sandy bridge), which have already started coming out. They are a 3rd of the price if the i7-990X
may also want to keep an eye on AMDs upcoming architecture, which should be out around the end of summer I believe.

Yeah will be keeping and eye on everything from now till Dec so if anyone has any other tech they think I might be worth knowing about do please let me know it is much appreciated. I am of course sticking to the firm I have put the original spec up from because they are happy to build what I have asked for and there for even having looked at other companies I can't get what I can with them. I am intending to take up 3D computer art up and a lot of other stuff that I cannot do with the machine I have now. I am also if I have enough experience this time next year going to film my sister's wedding and do a proper Blu-Ray CD with the ceremony edited with her permission and the sound track to it as well added on. I have lots of projects a monster such as this will be used for so it will not just be for gaming.
When the time comes and I get the beast I will video the unboxing and the machine running as well and put both on you tube just need to find someone who has a camera I can borrow to film and upload it to youtube.
All that for a single 24" monitor? Get two 28" widescreens at least. Maybe three, maybe even larger.
Normally I would advise you to buy cheaper hardware (for half the price of any given component, you can get 90% or more of the functionality - and most apps can't even use that much), but you seem to know this, and to have a clear goal in mind.
On the bright side, this beast should significantly lower your heating bills...
rule number zero for computer builders: do proper research by yourself, as sales people most likely don't know what they're selling.
let's go over your setup:
CASE: The NZXT Phantom is quite a nice choice, i've heard lots of good things about it and the airflow is great with good fans.
Noise reduction: With a good build, you won't need foam and gaskets. As long as you keep with low-noise hardware components, you won't be able to hear much, except for air being pushed around.
CPU and Motherboard: Go for Sandy Bridge components and an i7 with a K on it (those are overclockable). Most of the better motherboards are able to automatically overclock the CPU for you, thus rendering the overclock service a waste of money.
Cooling fan: Going with watercooling is a great idea, and is fairly noiseless in itself, you can get a Sandy Bridge CPU quite high using a good watercooling system.
Motherboard: 3-way SLI/CFX is a waste of money unless you plan on doing lots of CUDA stuff Most games run quite nicely on max. with a single decent high-end GPU, while they tend to gain a boost of 20-35% per additional GPU depending on the game engine (read up on Amdahl's law, it's pretty much the same with both CPUs and GPUs)
RAM: 24 gigs is overkill! No current games use 24 GB, and it's unlikely any game will within the next at lest 5 years. 8 gigs is more than enough, and you'll always be able to upgrade.
Video card: the 6970 is quite good, however, do consider the GTX 580 as it is a tad more powerful or wait until the GTX 6xx or Radeon 7xxx series arrive in stores
PhysX card: there are still only quite a few titles out there that properly support PhysX, however the GTX 580 mentioned above can be considered for the part in a future upgrade.
PSU: Not a bad choice, but do consider other vendors and models, as they may be more efficient... Efficient PSUs mean a lower power bill
HDD: The 1TB drives are good for storage, bot for games and OS, you could consider 1 or 2 SSDs in RAID 0, they'll give superior loading times and a more responsive OS.
Harddrive coolers: A front-mounted fan combined with the already good airflow of the case will most likely render the HDD coolers a waste of money, unless you'll be filling the case to the brim with storage.
ODDs: LG (as per my experience) make good drives, go for 'em
Sound: Consider whether you really need an additional sound card.
Speakers: Logitech make fine speakers and the Z5500 are no exception. Stick with 'em
Headset: In-ear earphones aren't for everyone, I, for one, find them uncomfortable. Also consider the Logitech G35 headset, it's quite feature-rich and sit really confortably, even if you wear glasses
Network: Killer NICs are overrated and rarely work as advertized. Many users have had problems with Killer NICs and their ping. The motherboard's onboard NIC usually does the job quite well.
Keyboard: The G19 is truly awesome, stick with it
Mouse: for 99% of all games, you'll never need 5600 DPI, consider going for a nice mouse with lower DPI, like the ROCCAT KONE or similar.
Mouse pad: Go to some computer stores and see if you can try it beforehand, it's really the only way you'll know whether it fits you.
Thermal Display: it's always nice to have, but consider whether you really NEED it, as the case already has a built-in fan control
Flash meadia reader/writer: Consider what card types you use in your other hardware and gadgets, you'll most likely be able to get off cheap by using an off-the shelf card reader, leaving more space in the case.
Webcam: good choice, but consider how much webcam talk/ recording you need to do and shop accordingly
USB hub: The G19 keyboard already has 2 USB 2.0 ports installed, consider whether you need one.
Software: PowerDVD may already be bundled with the optical drives, plus PowerDVD is a resource-hungry piece of bloatware! VLC offers the same and is free of charge.
Media center stuff: Make som research into what make and model the TV-tuner really is. If they don't label it, it's usually a piece of crap.
oh, and at least a dual-monitor setup is extremely handy when working with 3D animation and modelling.... with 3 monitors, you'll be able to use AMDs Eyefinity technology for games.... that means triple monitor gaming

The Killer NIC doesn't provide any tangible benefits from every review I've read. The only case it manages to provide some tiny improve is gaming while using bt. If you really want a good NIC, get an Intel Server card instead.
You also ordered a lot of harddisks. Are you planning to RAID them? IMHO raiding the boot drive isn't useful unless you do it for redundancy instead of speed. You'll get better result if you raid a second volume and install applications there that can benefit from it (like games). But then SSD will give you much better speed only with much lower capacity. So you may want to consider some mix of mechanical disks and SSDs. It's logical to use mechanical disks for data, but again few use can take advantage of the extra bandwidth. It may be a good way to get a bigger volume by joining them in JBOD though.

Just in case you didn't know, you need to hack NVIDIA's driver to get it working when any AMD card is installed. GTX480 also seem a bit overblown just for PhysX, but then who knows what future games would require. I won't drag on it but 3-way 6970 is also way overblown for a single 24" monitor. And there's also the issue of slot space. Most of these cards are at least double slot, have you check the layout of that motherboard?
Someone already mentioned, x58 and Gulftown are last generation tech. Sandybridge will give much better performance for the same core counts and GHz. However the high end equivalent won't come out until late this year (possibly very late or even early next year). Around that time, a new generation of GPU will probably surface or close to come out too. It's really too early if you want to buy the system in Dec.
Just one more thing about the mouse. Do you play MMO often? If not, you may want to consider another one. Personally, I don't like the feel of Razer mouse but that's just me.

I had a look at what advice I was given and some of it makes sense and given the cash involved I have made some adjustments on the basis of the fact some of you are obviously in the know. I will get 2 24 inch screens to compliment my current screen on this machine so there for will have three. That's going to look bloody awesome on WoW so hence why the mouse choice is what it is. I am determined to get this right before December when I order so you guys are being a massive help. The whole eye infinity thing sounds awesome will mean I have to move my computer to another room in the house to accommodate the 3 24 inch screens but I am happy to do that and we have the space. I really can't thank you guys for taking time out to give me some advice and push me into making this monster something to really look forward to!

I just have a look on Asus site, the P6X58D-E only supports:
3 x PCIe 2.0 x16 (at x16/x8/x8 or x16/x16/x1 mode)
1 x PCIe x1
2 x PCI
If you use 3 AMD + 1 NVIDIA card, the GTX480 has to be inserted in the x1 slot. It's possible if the connector is open ended but it's not clear from the small picture on the site. And then there's still the Creative sound card to plug in. You can get a PCI card instead but the PCI Xi-fi driver/chip are buggy. I've a Prelude and it end up lying somewhere in the drawers.
I would suggest the PCIe version, but you run out of slots. There are actually motherboards with every slot in PCIe form and use a chip to share the bandwidths among them. If you really need so many cards, you may have to consider something like that.

Yeah well I would be going for the equivalent or better in Dec 2011 I know the parts will be updated by that point in time regardless it has been a huge help to me from you all with the comments and recommendations you have given me and I appreciate that a lot and will be keeping this thread posted as things most likely will change as time progresses to the eventual purchase date. I have from being a teenager wanted to get something like this computers fascinate me on a lot of levels but I also love the bells and whistles side of things so for me the money I've saved I am spending is a none issue.
