What is the best solution for using a PC for gaming setup in different room then where your display is? Steam in home streaming came to mind but does anyone know if I would have too much latency / poor quality from things like USB if I just got extra long cables for input and video? Which is the lesser of the two evils? Can I stream at 1080p @ 60 fps with something like cat-6a or cat7? I want to use my TV in my living room but I want my PC locked in my bedroom the whole time.

If you go with HDMI cables you can buy good 45' cables, but going longer is iffy.

So late update, sry.

I took the Network route and its okay for the time being, around 50 fps and looks decent. Still does anyone know if Steam's prioritization of network traffic can work with a netgear router and what router settings could help? Also would it even matter if I am not using the Internet for anything else? (I am guessing maybe other systems could call out to the Internet on their own but I can't see that taking much bandwidth)

Also, I completely agree on steam link which is funny cause I didn't really see a point when it came out.

I'd personally get a long HDMI cable off of Amazon for cheap. The slight delay with in home streaming has always annoyed me, maybe its because I am actually looking for it so I notice it and it bothers me, I guess a lot of people don't care about it though. If you have something that it will work on you could check out Moonlight http://moonlight-stream.com/ it works the same as Nvidia Shield Streaming and Steam In Home Streaming but works on many devices. I've tried it on my phone with a USB OTG cable and a PS4 controller and it works really well as long as I'm using it on WiFi and not 4G.
