Here are the requirements:

barometric pressure between 0.5 and 3 bar.
At least 0.07 bars of oxygen.
Under 10 ppm of SO2.
Parent star between 0.8 and 1.3 Solar masses.
Surface gravity less than 1.8G.
Temperature between -75 and 115 Fahrenheit.
Non-tidally locked.

The low SO2 is the hardest part to find. The generation algorithm makes planets spawn with high levels of SO2. Concentrations under 3 ppm are even better.

It's so hard to find a decent planet these days.

When I was a kid Capt. Kirk could just stumble upon on a earthlike world populated by comely women- and do it without trying. But standards have fallen. :(

But what IS "Space Engine"? Obviously software of some kind. But what is it?

It's a free, open-source program which generates scientifically acurate star, planets, and galaxies, and also displays known space objects. It's really cool, I suggest you check it out.

Don't know if you mean "finding", or whether you actually mean "creating/simulating".

I checked out the side (haven't taken the plunge of actually downloading it yet, might eventually do that). But it seems to be more about simulating travel to known objects than it is about allowing you to create hypothetical worlds. But it does do that to.

The scientists of the world have found like 1500 exoplanets (the last time I read), but very few are considered "earth like". So if you mean "finding" then that's the problem right there. There aren't many with your specifications out there to find.

I played around with it, pretty graphics etc and cool "go to" system where you can bookmark stellar objects and explore planets, but it's ment to be a game engine. I eventually dropped it and played "Ascent - The Space Game" instead and helped building stargates and exploring fringe worlds, creating colonies with my overpriced starcruiser, it gave me more than Space Engine including other people to play with, and AI companion pilots.

The stars are procedurally generated, so there are galazies, stars, and planets that aren't really there, but they could be.

So the site generates whole galaxies of solar systems at random (but adheres to physics in how it creates them). And then you travel to these randomly generated stars and planets. But if you are like the OP, and have picayune standards for the planet you're looking for then you rarely like what you find. That's probably because the program is accurate. And that tells you something about how rare earthlike conditions maybe in the real cosmos.

No, it is not random, it's generated by a pseudorandom generator. And it's not a "site", its a downloadable program. And it is pretty like nothing else. Basically 3 or so cubic gigaparsec to explore.

What you mean is that it IS random.

That's the idea. Its doesn't simulate an actual piece of the universe. It generates a hypothetical Universe on the spot for you. But a cosmos that could exist.

All computer "random number generators" are really pseudorandom.

A random number works differently than a seeded pseudo random number generator. The "universe" is able to recreate itself and you can visit the same planet over and over, it if was truly random that wouldn't be possible.

Any algorithmic computation on a computer of a "random number" would be pseudorandom. It would be possible to build an actual random number generator on a computer that didn't use calculations.

For example, one could theoretically build a board that could measure radioactive decay in a tiny sample of a radioactive element.

Someone once suggested a method that would not even require a separate board -- monitor the input from the microphone and use the bit stream from the least significant bit on the microphone.

One obvious issue would be that many computer programs that need random numbers need a lot of random numbers in a timely manner. Thus, it might be useful to continue to measure a random variable to use as seeds for a good random number generator and then replace the seeds whenever it has obtained a new random number.
