Sounds a bit like me. I have the PIC17 ICE kit here, still. They don't seem to make those any more. See my website for 68008 involvement (Sinclair QL/Minerva).
Just had a peruse of the Anduin kit. The AT168 looked good, if a bit short on legs, until I saw the random 4, 5 or 6 cycle interrupt latency. The plus side is that it's all open source and isn't too expensive.
