This probably deserves some more thought than I can give it right now. The Yoda one certainly ranks up there.

I'd also say these:

"Nemisis" from Snatch:

"All Virginia Was Here On This Day" from Gettysburg:

On a similar note, "You ARE the First Brigade" from Gods and Generals (also a mostly forgettable movie):

"Do not tell me it can not be done" from Pearl Harbor (great moment from an otherwise forgettable movie):

"Baird Man" from Scent of a Woman:

"I Go First" from Rome (ok, a TV show, but this is brilliant):

The devil's long rant in Devil's Advocate. The one where he calls god a sadist and himself a humanist.

Kirk's speech at Spock's funeral in Star Trek II The Wrath Of Khan.
Picard's "line must be drawn here" speech in Star Trek First Contact.
The President's speech in Independence Day.
The King's speech before battle and what Gandalf said to Pippin when the Orcs were breaking through in The Lord Of The Rings The Return Of The King.
Yoda's Wisdom to Luke in Star Wars Episode V The Empire Strikes Back.
Elizabeth's speech before battle in Pirates Of The Caribbean At World's End.
Any long sentences said by Optimus Prime in the Transformers movies even the not so good Revenge Of The Fallen.

in South Pacific [1958], Lieutenant Cable singing "You've got to be carefully taught"-

"You've got to be taught
To hate and fear,
You've got to be taught
From year to year,
It's got to be drummed
In your dear little ear
You've got to be carefully taught.

You've got to be taught to be afraid
Of people whose eyes are oddly made,
And people whose skin is a diff'rent shade,
You've got to be carefully taught.

You've got to be taught before it's too late,
Before you are six or seven or eight,
To hate all the people your relatives hate,
You've got to be carefully taught!
"
