Okay, this season is jampacked with stuff, both new and old, there might be more to come but at writing this it is at about 40 shows starting this season. There are so many that I think that I might as well post all their names here that if curious I could answer a question on any of them that I am watching, and currently I will be watching the vast majority, but talking about them all might be a bit much. I will probably only be able to talk about a select few in any depth.
Making up 16 of that amount are sequel series, which are:

Okay, the sequel or spinoff anime of the season, the fact that I am already familiar with them means I can probably give a more define expectations of them, and anyone interested would have other seasons to check out if interested.
Attack on Titan The Final Season: If you have heard about modern anime, you have probably heard of Attack on Titan, well this is the final season, off the top of my head maybe 4th or 5th season, somewhere around 60 episodes all up already. Certainly worthy of attention. Expect war themes.
The Promised Neverland Season 2: This first season certainly grabbed attention, being kind of dark in cerebral, following children trying to escape a dark situation they barely understand. The scenery is changing, and little idea of where it might go.
Re:Zero Season 2 Part 2: The second part of the second season, which was getting certainly dark and grim as the longest arc so far, real nightmare ideas. This part seems to be finally having some good way out of that.
Show By Rock!! Stars!!: This is kind of a double sequel, being a joining of the original Show By Rock cast and its spinoff, which makes me happy as a complaint I made about the spinoff was that I missed the original cast. If interested it is from the Sanrio company, the one behind Hello Kitty, so it has some really cute animal characters. Yet to be seen if it will share the amazing CGI of the first series.
Cells at Work!!: What is to say about Cells at Work, it shows the functions of the human body as if the cells are people. Surprisingly entertaining and education, Well worth checking out.
Cells at Work! Code Black: This is a spinoff running around the same time as the sequel season, having the difference of a human body that is not as pristine as the main series, and skewing a bit older. Certainly might add more.
Laid-Back Camp Season 2: The first season was a surprise hit, being an incredibly laid-back series about characters just camping, super relaxing and great small bits of humour.
The Quintessential Quintuplets ∬: In all honesty I am not a bit fan of this series, it being a harem show around one guy and a group of quintuplets. Some people might like it, but its idea of a harem just does not interest me like it might have once done.
Wixoss Diva(A)Live: This is a spinoff of the Wixoss series, animations around a Japanese collector card game, the series itself playing out like a mix of a dark magical series with a card game like Yugioh, although the main anime focused less on the game more on human drama. This spinoff seems to have done away with the partner cards that would talk to the player promising a wish and dark secrets, opting instead for some kind of VR idol thing, which in its first episode didn’t appear too dark. So who knows, I doubt familiarity with the previous seasons will be needed.
World Trigger Season 2: A shounen action series, which was something that did not click with me much when it aired some 5 years ago, a pretty long gap. I thought its sense of humour and character writing could use a bit of work. The first episode did look nicer than the previous season, so it might look good, the first season was like at a long 73 episodes, so you would have a lot to catch up.
That Time I Got Reincarnated as a Slime Season 2: The first season was pretty mainstream, got quite a bit of popularity in the idea of a slime being the main character, but I do have complaints in places like being too much power fantasy and other things I thought were missed opportunities. In the general scheme of things it is okay.
Non Non Biyori: Nonstop: This series is a delight, a mostly simple story around a bunch of kids off in a country town in the middle of nowhere Japan, it is an equally amazing relaxing show as the camping show, and also can be surprisingly funny. I think it gets attention for just little snippets being incredibly easy and funny to watch, this first episode actually made snort while laughing and have tears in my eyes. The humour is not high energy, but master of using the comedic pause for maximum effect.
Uma Musume: Pretty Derby 2: Another I don’t have a lot to say about, the general premise is what if race horses were actually girls, which can have some questionable elements, but in practice it mostly works fine. This second season looks like it is spreading around character focus for more interesting story ideas, like a horse girl getting an injury that could cancel her career, much like a real horse.
World Witches Take Off!: Honestly, I don’t have much a connection to this series, I watched one spinoff and was not really interested, so I have not actually checked this one out.
Log Horizon: Destruction of the Round Table: This one was also something like a five year break between season, the idea is people suddenly became their MMO characters in a fantasy world, and they try to understand their situation and able to find some meaning in this world that they actually respawn. It can get into its worldbuilding political side, not just action elements, which to some might find a little dry, the first episode back in fact was almost entirely political intrigue.
Dr. Stone: Stone Wars: Another shounen series I was not a big fan of. The idea is that people suddenly turned to stone, and something like a millennia later one boy somehow breaks free, and he hopes to rebuild society back with science. I am not always a big fan of its attitude around things, and some elements I find a bit suspension of belief, which might be forgiven with another show, but one that prides itself on the science and a main genius character with an ego makes me less forgiving.

Now the New shows, as seen before, there are quite a few this season that I could probably give some more in depth reactions about. Something like a single sentence saying that Skate-Leading Stars is about team ice skating, Sk8 the Infinity is about skateboarding and Redo the Healer will apparently dip its toes into rape used as revenge. But for now I will just post thoughts on about 10 of the new shows.
Vladlove: This show looks like a strange beast, it does look new and such, but other elements feel right out of some 80s anime series, along with other visual elements that feel creatively distinct. Probably a major distinction with this normal teenager picking up a vampire girl in romantic like subplot because the main character likes giving blood, is that the main character is a girl and as such seems set on a sort of lesbian elements. The first episode kind of otherwise feels like a mystery in what sort of story it is, whether it is horror or not, although some level of sexual, so I am curious to see more. It does not seem to make a big deal of a female character that likes another female character.
Otherside Picnic: I am just ordering these by a general list, but this series just so happens just like the above to have implied lesbian characters, or at least it seems word is that it does. But otherwise does not seem like it is pandering to a male audience in this way, and takes a more mature and measured response to it. The general story is otherwise around like some sort of idea of a parallel plane that plays out like a bunch of Japanese version of creepypasta and SCP, sort of vague monsters of rumour and urban legends. By those alone, and a pretty nice looking show in general, I think that it is worth watching.
Suppose a Kid From the Last Dungeon Boonies Moved to a Starter Town: A general light series, more comedy with an overpowered protagonist in a fantasy story, the name pretty much explains things, where the weakest person in an over the top powerful hidden village goes to normal society. The comedy seems to generally follow that the main character still thinks that he is weak and has no idea that he comes across as pretty much a monster to everyone else.
Heaven's Design Team: This show is coming out on the same days as Cells at Work shows, and similarly feels like a sort of edutainment show as they do. The general concept is a bunch of angels creating animals under god’s vague requests, so we get information of why animals work as they do, and why certain animals would not work, like a Pegasus.
So I'm a Spider, So What? : Now this one, this was the show I have been looking forward to, based around buzz I had built up some pretty high expectations, and after the first episode I would not say that I am disappointed. It kind of works similar to the reincarnated as a slime show, where the heroine is reincarnated as a spider monster in a fantasy world instead of a human, and although similar I kind of predict there are going to be differences. It seems to have set up that the heroine is not going to have an easy time making her way to be safe, where she was not automatically gifted with the power to understand everything, and her siblings to her own mother were actually out to eat her from the start. Many are saying that the heroine at least so far is totally carrying the show, and she is a delight.
Bottom-tier Character Tomozaki: This one is a bit divisive, it following the top Japanese player of totally not Smash Bros as he has given up on life in just being a loser, before another person makes a bet that real life is actually a top tier game and he can win at it with the right methods. He is kind of trash at the beginning, not just a sort of “pathetic” introvert but his attitude to other people is toxic. But some buzz around this show seems to imply that it will get better, perhaps him able to grow as a person. Other elements from the first episode such as apparently how it measures happiness by whether he could get a girlfriend seem a bit less good.
Horimiya: A romantic comedy anime around a couple of normal teenagers who don’t seem like a good fit at first but might actually be very so. The twist premise is around the idea that you should not judge a book by its cover, because people can have surprising sides. The episode played out nice enough, and general reaction from some reviewers familiar with the series seem very positive on how I think it goes into interesting topics.
Kemono Jihen: General story is around a paranormal detective, the detective himself paranormal also. The first episode mostly focused on the relationship he builds with a kid that seems to be the co-lead, and it seems nice. Not a light and breezy show, since the first episode alone had some pretty dark themes, and although it will probably be fine with teenagers, some parts look a little gruesome maybe.
Mushoku Tensei: Jobless Reincarnation: This one, I have in general negative opinions of. The positives is that the first episode looked fantastic, it was visually really good. A neutral point for me is that this seems to be something like the grandaddy of isekai series, its source material apparently mostly kicked off the stories of people being reborn in another world, maybe with some cheat abilities. The down side is that the main character is insufferable, with him commenting as a newborn baby (in his head) over how his mother looks hot, that he likes suckling her, he creeps on his maid by wearing her dirty underwear on his head as a toddler, and has some rather perverse things to say over a tutor he gets who looks young (although older than him) by talking about what her hair situation might be. I regardless feel it might be interesting to watch, even if I hate certain parts.
Wonder Egg Priority: And this one for last, it is going to be a complicated one. The general premise is around a girl who is not going to school for undisclosed reasons, who comes into possession of an egg that brings her to a world in her dreams under the promise of getting a friend. A lot of its themes are pretty dark, this first episode following things like bullying and even suicide, with some pretty striking imagery that could be pretty hard for some people to be comfortable watching. The episode ended with some promises that seem a bit irresponsible, but my feelings is that it has some things planned to tackle some topics in ways around dealing with things like grief.
I am not including a video from this series, the OP and ED are not out at writing this, and it does not feel right to post the trailers of Wonder Egg Priority. I would kind of push the idea to just watch it if you think that you can handle some dark themes, the first episode’s visuals were very nice that I kind of suspect going in without any idea beforehand would be something to recommend. It is dark, but at least from initial reaction I don’t think that it is entirely morbid, I think the only way to understand it is to experience it yourself.

I have no idea why I like it so much but I'm just glad Laid Back Camp has a new season. Not really the sort of thing I normally watch but it makes me feel nostalgic and want to spend some more time in nature IRL. Other shows I'll be continuing this season in order of interest include Attack on Titan, The Promised Neverland, Dr. Stone, and Re:Zero.
Other than that the only new show I've seen so far has been Horimiya. There doesn't seem to be anything particularly interesting about the premise but I like the characters and it seems charming, and with 13 episodes I'm hoping it'll have some decent pacing.
Outside of seasonal stuff I've mostly been looking for more adult oriented shows, having recently discovered and enjoyed Usagi Drop and Kids on the Slope.

I love laid back camp too, super excited about a second season. I've totally embraced The Secret Society Blanket way of life. it's made me want to get back into camping and hiking which I haven't done in years. I even went looking through my boxes in storage in search of my old gear.
For this season I started kemono jihen, sk8 the infinity, dr ramune, jujutsu Kaisen. So far I like them all for different reasons.
continuing dr stone, which I didn't expect to see another season of! I know theres a few more but can't think at the moment.

Sk8 the infinity did grow onto me in the following episodes, when I really let myself be charmed by the whole skater aesthetic thing. Reminiscent of the sort of stuff that was popular when I was a kid with the likes of Tony Hawk on the Playstation.

We are several episodes into the new season, I thought that it might be worth coming back for a couple things.
Firstly, a show I did not mention much about was Gekidol, particularly because it is weird and I don't know what I could have said about the first episode. It did include an entire extra episode of a totally different story, played out like it is a play that was mentioned in the normal show, Alice in Deadly School, a zombie outbreak story. The really weird thing about that extra episode was how it actually plays things out like they are by the rules of a play, all the dialogue, character acting, roles of characters, and transitions, feel like they are a play, but are an anime. This also goes into the main story also has weird sci-fi elements, mixed with a mysterious natural disaster in the past, and yet apparently just another idol show. But the show has actually just gotten weirder, starting from the 4th episode it did things that I would describe as giving the bird to queerbaiting I might have expected, and it just super weird for a show that looked like it would be about idols, instead becoming much more serious.
I am leaving all recent episode just repeating "what the heck is happening", it is so weird. I suspect it is making itself a hidden gem of the season
And I could not provide it before, but I can now give the OP for Wonder Egg Priority, and I highly recommend checking it out, I can only describe it as beautiful, especially after the episodes have introduced all the principal cast. To repeat it does have themes of suicide, and it generally has the audience watching with a baited breath in whether it can thread the needle with sensitive topics. But the show also has gotten a huge amount of attention of people analysing it and theory crafting, and has generally just continued to be a standout in a season of shows that you would think would even have standouts stuck among the trees.
Also a quick mention of EX-ARM, which has received attention for all the wrong reasons. It is a full CG anime that is being directed by someone who has no experience in animation, which has given a lot of motion capture, but totally failing at things like character emotions and other animations. It is actually kind of hilarious at how genuinely awful it is, something actually fascinating to watch, and I am never the type to do something like an ironic watch.

I think that pretty much everything for the Spring 2021 season has premiered, this season seems pretty heavy with some, there is a lot to see, so I am only going to pull out some of the ones I have taken particular interest in from their start. Even though still looks like The amount I will be mentioning will be big.
Tropical-Rouge! Precure: To be honest I have not actually watched any Precure before, I generally figured as something only young kids (girls) would enjoy, but I had kind of heard good things, and I actually can enjoy some shows for younger audiences, so I decided to jump in on this new version. And yeah, it is for younger audiences, and I can feel the parts that were probably set up for selling toys, but I am enjoying it. The characters are likable, my favourite so far would be the third girl, Cure Papaya, but also the magical companion who is a mermaid is good too. One would expect a magical girl companion to be the ultra nice cute mascot character type, but she is actually humorously self centred, doing what she is for her own benefit of hoping to become a queen.
Higehiro: This show by its basic premise sounds like the sort of thing that might turn heads, it generally being a salaryman who got turned down and then in a drunken state took a teenage runaway girl to live in his place. It sounds seedy as all get out, but what is kind of cool about the show is how adamant he was of romance being out of the question, took her in because it is hinted that she was essentially prostituting herself for accommodation, and as a kid she should be in a safer environment and expect better of people and for herself. A point of things like she should not have to be thankful for a smoker to care about her enough to smoke outside, that being considerate for her should be the least expected and not worth acting like it is some super kindness.
Odd Taxi: I think that most viewers have the same reaction that this show is just odd, fittingly. It seems to be set in an anthropomorphic world with a style that would make you think childish, but a whole lot of the themes and setting is also quite grounded and adult. We follow a Walrus guy who is a taxi driver, and the first episode has hints to things like a missing high school girl and some sort of dangerous guy with a gun, as our cab driver has conversations with his passengers on elements of today's world such as social media fame.
I've Been Killing Slimes for 300 Years and Maxed Out My Level: This mostly seems like a light hearted show, with an overpowered protagonist that if you are fairly familiar with anime you might even be bored of already. What makes this premise a little different is the heroine died from overwork in her previous life, and with being asked by a goddess what gift she might want, decided on immortality so that she could enjoy a very simply life of doing the bare minimum, and before she knows it 300 years have passed and when asked to have her stats checked she has maxed out her level from doing a small work every day. I think that it is admittedly sounding difficult to expect understanding a character that has apparently done the same basic stuff for 300 years, but the first episode was kind of interesting in how she is kind of seen like a guardian of the local town that helped them with things like medicine. The first episode also introduced a dragon that is about the same age as her, so the starting dynamic was kind of nice.
Don't Toy with Me, Miss Nagatoro: Now, this is a series I have seen a lot of memes of for the manga, and it kind of seems like Uzaki-chan, where it is mostly about a girl teasing her senpai, that she probably likes. Going through the first episode, it does come off as a little bit meaner spirited, since Nagatoro's actions feel a bit more like bullying and harassment rather than more good intentions from someone like Uzaki. Some people have already written it off if it is glorifying/fetishizing some elements of bullying.
86: The general premise, which I think it ruined a bit in the first episode as a surprise, is that a idyllic society is at war with some other group, but none are too worried because they are told that none of the clashes are costing them human lives because of the drones they have. The heroine is upset by how even the other people in the military care little about how much drones they lose in combat, and the truth is that the drones are actually piloted by humans, that lack the white hair that the idyllic society people have, and seem to be in general dehumanised. I enjoyed the first episode.
To Your Eternity: This one probably stole the show as the best first episode, a really good self contained 25 minutes. The general idea is of a narrator, perhaps a god, put a reflective ball into the world, which would mimic things it came into contact with, just to see what would happen. It was first a rock, then moss, and then a wolf that died on it, the ball then trying to understand the wolf's body eventually ended up back at its old master, a boy who is the last one left in his tundra isolated village, the others having left some time earlier to find a paradise land. I won't say much more, but the episode is a brilliant mix of beauty of atmosphere, tragedy and the human condition. Do recomend.
SSSS.Dynazenon: Now, I am not really one to mention sequels, but this series is inherently related to a series from a few years ago called SSSS.Gridman, also released by Studio Trigger of Kill la Kill, Little Witch Academia and the fairly recent BNA on Netflix. Although this does seem more likely to just be a spinoff, and probably would not at all be required to watch Gridman, but that show is great so recommend anyway. To explain plainly, it is a series that kind of mimics old Kaiju TV shows, the sort of thing you would see in Power Rangers where they get big and fight in a model city in rubber costumes, it has a very interesting element when you see kaiju that look like someone in a rubber suit, and then general anime stuff on top, really good details. Gridman also had some really good character writing, so I am expecting the same, and the characters are intersting so far, even something grounded with a boy who seemingly does not like his mother's new boyfriend, and a girl has got a reputation of asking boys out and then standing them up.
Vivy -Fluorite Eye's Song-: The premier of this show was double episode, and I did kind of screw up in watching them in the wrong order, but the general idea is of some point in the future AI suddenly went crazy and went on straight up killing human. An AI was sent 100 years into the past to interface with an android Diva that still existed 100 years later, and to try and alter history so that AI would receive less development and rights that led to them being able to rebel or something. The reasoning sometimes sounds odd, that I think it is natural to not trust what real motives might be, if the AI is taking the right approach, the titular Diva more empathetic approach could be a more wildcard. It is really good so far, and there are parts like a 15 year time jump between episode 2 and 3, so not sure what to expect.
Combatants Will Be Dispatched!: This show is probably getting what expectations that it is because of the fact that the original creature is the same original creator of Konosuba, which is an incredibly funny show. Negative reactions though are also pretty common, generally some see it as the creator maybe being too much of a one trick pony with this also being an isekai, of an idiot pervert that is part of an evil organisation being sent to another world to start a plan of taking it over. It is also not really that funny so far, and part way into the second episode I realised one reason for it, the comedic timing in the show has so far been abysmal, where Konosuba used timing very well, this one often feels like a long stream of stuff happening that no time is given to let something linger for good payoff. The main character is also very unlikable. The second episode though did introduce a character that I might say could actually be good, a woman in a wheelchair called Grimm, who is also heavy on looking for a man in a very forward way, and is a humorous level of a vindictive terrible person.
Dragon Goes House-Hunting: General plot, a dragon was kicked out of home by his family, and is now searching for a new home, it is generally comedy with a lot of references. The references so far have been fun, with a number of Monster Hunter, and I am actually kind of a fan of the Western fantasy world setting with creatures like harpies and dwarves. Also, heroes are cringey bad people that hurt harmless monsters, go through people's cupboards and break pots.
The Saint's Magic Power is Omnipotent: Looking up a little of the new shows coming, this one was something I was a little interested in, and although there has been a bit of negative reception from reviewers, I am still into it. The basic idea is that the main character was summoned to another world to act as a nation saving saint, but she was ignored by the prince because a younger teenage girl was also summoned and was designated the sage, and unable to go back home she just stays around the palace until it gets too boring. The main character eventually finds a way to keep herself busy by learning to be a herbalist with making potions and starts to find she might have has powerful traits after all. It kind of feels like a reverse harem anime, and that can be fine, and generally it can be a nice time to follow a woman as she comes into contact with beautiful men, and also that an interesting character in these types of shows does not need to be super good at killing things.
Super Cub: It might not end up as anything interesting, but I really enjoyed the first episode. The plot of this one starts off with a high school girl who has no family, friends, or hopes for the future, and is just kind of existing, until on a bit of a whim she takes interest in the idea of getting a moped, that maybe she could travel a bit further and with more ease. The first episode is super minimalist with things like how much people speak and does a lot with show not tell. It was kind of starting from a bit of a depressive state, you could probably read into the main character as having depression, and I think that it is an interesting place to start from.
Shadows House: This show, it is the last one I am mentioning, and certainly not least, because I can already tell this is the show I will be looking forward to every new episode. The premise is strange, we follow a girl who seems new to her setting, of a kind of strange large Victorian mansion, as she meets her master that looks like a shadow resembling the girl, and yet we learn the girl is apparently a doll made to look like the girl as her face, since being a shadow makes expressing things hard, and clean up after soot that is apparently created. It is a really surreal setting, and permeates this feeling of unease and some sort of ominous truths that we are only seeing the barest hints of, like if the girl really is a doll, and against our natural perception the shadow people are the more human. As viewers we are naturally going to find it easier to see the normal looking girl as human, with the shadow as inhuman. The show makes me think of mixes of Rosen Maiden and Princess Principal, I am super into it. Just look at the moody video bellow.

Cells at Work is a good show, although I thought the second season was not as good as the first, with the spin off also being a bit better. Do you watch it in English dub, or subtitled? Although perhaps you have a sight trouble with the reading.

Cells at Work is a good show, although I thought the second season was not as good as the first, with the spin off also being a bit better. Do you watch it in English dub, or subtitled? Although perhaps you have a sight trouble with the reading.

I prefer subbed. The second season might not be as good, but it's still good. Plus, I'll take any extra worldbuilding I can get for this show! (And the lactic acid bacteria are adorable! Nyuu!)

I have at least seen the first 3, and they are good choices. At this point I have seen far too many.
For some recommendations.
Little Witch Academia can be a good one, I have kind of had my love of Studio Trigger returned recently, of which I think very highly of Kill la Kill, although I understand not everyone might be comfortable to watch some of the adult imagery in that one. Kiznaiver fit very much into the heavy human drama side of things.
There are also anime other than those by Trigger, for a rather obscure one there is The Girl in Twilight (Akensasu Shoujo).
The Ancient Magus' Bride might fit if you want some European folklore stuff.
And picking a random comedy Asobi Asobase, of which I don't know is right, but is pretty chaotic.

I have a lot of experiences with different shows, and like to be able to hand out recommendations to find things that people might enjoy.
You don't have to be a huge fan of what is the most popular (AoT and MHA), often times those sorts of things provide a good baseline of what might appeal to a broad audience, but there can be some interesting more niche titles. There was a point in time I was all about Death Note, but kind of got sick of how prevalent it was.
As some news it seems that it has been announced that Madoka Magica is going to have a new movie continuing the story after Rebellion, which is good news because it did not finish in a super fulfilling way without the idea of more. I do like the movie, I sometimes feel the urge to watch scenes like the Cake song, which I love for all the different things mixed into the scene, like a weird mix of ominous and cute.
