I found myself becoming quickly bored by
Neon Genesis Evangelion. Yes, Mr. Creator-Whose-Name-I-Can't-Recall, you've had some bad things happen inside your head. Untreated chronic depression can do that to you, especially if you then go talk to a Freudian about it. But really, is there anything quite so boring as someone recounting his personal experiences in therapy? Even in metaphor?
I can recommend the first two
Tenchi Muyo series, colloquially known as
Tenchi Muyo and
Tenchi Universe. The third one,
Tenchi In Tokyo, gets a little too cutesy for my tastes, although I will always treasure Tenchi's confrontation with the Big Bad at the end - he charges up, oversized sword in hand, then abruptly plants the point in the ground, slaps the Big Bad so hard her little coat flies off, and proceeds to tell her she doesn't have to be lonely - she can come live with him!

Comedy gold, I tells ya!
Also, I can unreservedly recommend
Cowboy Bebop and
Hand Maid May. Others have made some good recommendations, too!
