I figure this would be the best place to ask...what is the appeal of My Little Pony. From what I've seen it is a show made for young girls with some decent plot ideas.
The first thing you need to understand is it was never just made for little girls, the creator, Lauren Faust, always had a show in mind that could be enjoyed by both little girls and their parents. You need to understand just who Lauren Faust is. She worked on the Power Puff Girls and her husband was the creator for it, a girl show also known for being popular among a male demographic. Lauren Faust disliked most girl shows for being dumb, so she out to create a girl show that wasn't dumb. As it turns out for many males it really doesn't matter if a show is girly or not, it just has to be good and not dumb.
Now, as for why people like it, there are lots of different reasons. Some people just like the animation and the cute ponies. Some like the characters and the plot. Some like the humor and the sly pop culture references thrown in. It's not exactly the same for every person.
I also heard that she wrote the plots to Foster's Home for Imaginary Friends. I enjoyed both shows quite a bit growing up. The difference is, that was before I developed a set of standards (admittedly, my mentor had to help with that; I am very non-judgmental naturally, to a fault.) Kinda outgrew cartoons, although some of them had a cool art style (Courage the Cowardly Dog anyone?)
As far as shows for girls being dumb, I completely agree. Women should have shows as interesting as what is made for men, not crap like The Care Bears.
The humor in it seems very much like the random humor many teenagers use, along with exagerrated reactions. While this makes sense for younger kids, I don't see how that would appeal to the teenagers/adults that watch the show. Then again, this culture does have Family Guy...
I say through an episode trying to see the appeal and didn't notice any pop culture references, and I am certainly not a hipster.
