Dexter's Laboratory
Johnny Bravo
Cow & Chicken
Powerpuff Girls (C'mon, does it really matter what gender you are when watching this? It rocked :D)

And I don't know if you count these two as classics, but these were certainly the last cartoons I absolutely loved before the channel went downhill:

Xiaolin Showdown
Foster's Home For Imaginary Friends

Johny Bravo for the sheer laughs and Teen Titans for the storyboard and character development.

Honorable mention to Billy and Mandy ... can't beat a Jamaican reaper and a blonde psycho :D

Man, whatever happened to Code Lyoko? Given it wasn't the best-written storyline CN had to offer, but it was better than the other crap that they showed during the day.

I really liked some of the concepts of that show. Digital frontier, foxtrot tango whiskey. It's like The Matrix for kids. Or Tron.

It also had one of the best theme tunes I've heard in a cartoon series then and since. Some of the cyber sequences were just freaky.

Oh yeah! They really had a well-done soundtrack. Someone had a torrent of the soundtrack disc featuring music by the Subdigitals (a techno pop band that did tracks for the show. They're also mentioned several times, and even make a cameo appearance in one episode, when Aelita auditions to become a band member.) The theme "Break Away" (the instrumental version of which was used as the closing theme in later seasons) has a place of honor on my iPod playlist.
