There were a lot of Easter Eggs in Toy Story 1 that I mostly didn't even notice until I read about them afterwards, but I had to re-watch it maybe 5 more times to catch them all.

For example, when Buzz is running away from the globe, it sounds like the big rolling boulder from Raiders of the Lost Ark. When Buzz is trying to free Woody from the crate he's trapped in, the toolbox on top says Binford, which was the name of the fictional tool company on Home Improvement. There was a giant Mickey Mouse watch-clock in Andy's room. When Helen, Sid's little sister, is having tea with Buzz and her dolls, it parodies E.T. Several classic board games appear in the background like Mouse Trap and Operation. Also the word KRAT is on the back of the Pizza Planet truck. I read no one really knows what it's supposed to mean. And of course the drink dispensers and one of the games is like the Alien movies, and obviously Pizza Planet is a spoof of Chuck E. Cheese. And there's some girl's name on the inside of Sid's backpack that insults her by saying she has cooties, apparently she's a real person who really wanted to have her name shown in the movie.

I think it was in Monsters, Inc., there is a restaurant name Harryhausen's. Named after Ray Harryhausen

Not a movie, but the TV crime drama, True Detective, when police detectives Marty Hardt (Woody Harrelson) and Rust Cohle (Mathew McConeghey) are searching for a mysterious, occult serial killer called the Yellow King, Rust stops at an abandoned religious school to talk to a grounds keeper on a rider lawnmower. As he approaches, a fence post blocks part of a message on a reader board in the foreground, for which the audience for a second sees:

NOTICE
KING

Yes, the lawnmower man turns out to be him.

When Sulley has to say goodbye to Boo in Monster's Inc, she gives him a Jessie and a Nemo doll. And Finding Nemo wasn't even out yet. :)
