In some of the Tom & Jerry cartoons, there is a gray mouse who sometimes talks, and is sometimes seen wearing a diaper.

Why is it that he is called Tuffy in some of the cartoons, and called Nibbles in others?

Tuffy and Nibbles are monozygotic twins
Tuffy has a rectal prolapse but they sometimes pretend to be each other, Nibbles just likes wearing the diapers 8O

It is one mouse but his full name is Nibbles Tuffington, "Tuffy" is his commonly used nickname.
He has intermittent polyuria 8O

I always used to say that Tuffy "tinkled". This is a reference to the high notes on the piano played when Tuffy walked. I thought the piano sound effect sounded like urination.

In the late 1940s, Jerry adopted a little gray mouse foundling named Nibbles (also later known as Tuffy), coming from a certain "Mrs. Bide-a-Wee Mouse Home." In the years of Nibbles' debut, he is depicted as a constantly hungry little mouse (as told by Mrs. Bide-a-Wee Mouse Home herself, and his open-mouth-pointing, lip-licking, lip-smacking, tummy-rubbing gesture). In later years Nibbles got rid of his hungry personality and was given a voice, but usually in a foreign language in keeping with the theme and setting of the short (if it's English, it's usually in a British accent).

Tuffy (originally Nibbles) is a fictional character from the Tom and Jerry cartoon series. He is the little grey, diaper-wearing orphan mouse who first appeared in the 1946 short The Milky Waif. Tuffy was later featured in the 1949 award-winning short The Little Orphan.

He was formely known as "Nibbles" at the time until 1954, when the writers decided to change his name to "Tuffy" without changing his appearance. Oddly, Tuffy is called "Nibbles" again in the Tom and Jerry movie, Tom and Jerry: The Magic Ring.

Tuffy did not usually speak, but he spoke mostly in French whenever he was featured as in a "Mouseketeer" cartoon. On occasions, he would speak with a strong British accent.

"The Three Mouseketeers" was the cartoon where the above-mentioned "tinkling" sound effect occurred.

Also, in "Two Little Indians", there were two gray mice.

The classic Fred Quimby-era T&J was the best, with the Chuck Jones era a close second.

The ones animated in what was then Czechoslovakia, the Hanna-Barbera era, and the Filmation era were not that great.

I do have to agree that the classic versions of Tom and Jerry were the best but I also liked most of the modern ones too.

I remember the Filmation ones. They had weird music on them. They don't rerun those the Filmation version anymore.

Tom's original name was Jasper , wasn't it ;)

Gawd , those later ones (with the shark , in space) were just down right s***y , totally unfunny & lifeless

Same fate happened with Popeye also :x

Whoever composed the Filmation music was probably high as a kite.

Puss Gets the Boot was Tom's/Jasper's debut.
