My dream job is either as a musician ( though I think I would get tired of it in the long run ) or game programmer having my own game to work on.

I kinda think the later one is at least somewhat possible. I even have a concept and have started making a prototype. Only need to finish it to the point where it's playable and then make money on it. I think the last part is going to be the hardest. =P

My dream job is to do science research. I'm coming up to 6 years in my retail job and all it's taught me is that I don't want to do anything people orientated or corporate.

I would also like to do science research but it looks like this will have to be done independently and funded through some sort of business venture.

The academic route is impractical as time is against me:
43 years old
4-7 years doing a BSc part time or through distance learning
? years doing a PhD and whatever necessary postdoctorate qualifications
? amount of time applying for and securing the necessary funding

By the time my first paper came out I'd be near to retirement.

Anything at all actually, with the proviso that I can do it from the comforts of home. No need to commute, which translates into a huge reduction in car-related expenses, working my own hours, taking my own breaks if and when I need to, no awkward socialising with those horrible 'NT's', and no boss looking over my shoulder (quite literally, in one job I had) telling me to work faster.

Well, I have one of my goals achieved under the 'dream job' category.
I'm self employed business owner in the a hard to title 'Equestrian' sector. There really is no name to my job but I look after other people's horses and also provide horse drawn carriage hire for weddings, funerals and other occasions.

What I would like to do and am now striving for is to be a 'best selling' author because eventually I won't be able to keep up my current dream job physically when I get too old and decrepit.
Step one is complete, I managed to get a fiction book published hence the foot is in the door, now I need to follow through and keep writing until something hits a nerve in the right circles, I have six stories on the go at once!! ! My mind is a little busy ATM but I have time for now.

I might be a little unorthodox (Ha!!) in that I'm living my dream, BUT I guess the moral is that if you put serious plans into action, it just might be achievable and anyone can live their dream too. It won't happen overnight... my plan is in it's fifteenth year now but I'm there and proof it can happen if you pull your finger out.

You're really giving me hope.

My dream job is:

Harder to attain:
Famous singer

Not as hard to attain:
Singer who can make a living out of it
Literary translator/writer
Voice actress

Good luck from Aarhus ;-) Being an F-16 pilot was my childhood dream. All I achieved was 10 months as a grunt in the "panserinfanteri", heh.
