Does anybody else here get excited about job vacancies, start on the application, think "What the hell am I doing? There is no way I can do this job" fight themselves into submitting the application anyway then worry what they might actually get the job or just feel like an complete idiot at the interview Or is that just me?

B.

Yup. Try to find a job you would actually like, so you don`t have to face these doubts constantly.

I did that just last week. I got an interview but ended up not going. I was afraid I would get the job.

You never know if you can get the job unless you try, right? The more applications you send out the better; even if you are under-qualified, job postings often list the employer's "dream qualifications"...they many times will accept people who don't meet all of the criteria.

Now for the interview, you do need to at least appear confident, even if you're shaking inside! Practice some questions they may ask, get a friend to do a mock interview with you. The more you prepare, the more easily you'll be able to answer their questions.
