Pierogi? I've had that in Poland. Eugh. Try barszcz instead. If you make it yourself it can be cheap and very filling.

Both can be made by hand, I sometimes make my own Perogies, however usually we just get them at the grocery store, they are cheap, like a couple dollars for a several pound bag.

The gnocchi can be found ready made too.

Here is a Recipie I posted to another forum a while back, we really like this one, it is my husbands work mostly, you can substitute the Tofu for chicken, or leave it out:

This sauce recipie is something that my husband and I have been playing with for over a year, we used to eat it with a lot of chicken stir fries, but I just used it with a Tofu Stir fry and it was awsome! My whole family of non veggie heads ate it, even though they are terrifed of the stuff!

If you really don't like Tofu, you could just not put it in, still very good!


Put into a blender:

About 2 tablespoons of honey

About 2 Tablespoons of olive oil (or oil of your choice)

About 3/4 cup of soy sauce

2-3 large cloves of garlic, chopped

A piece of fresh ginger about the size of your pinky finger, shred it, grate it, or chop it up.
(In the store, you are allowed to break off a piece from larger pieces! This is a common practice for us fresh ginger buyers! Or, you could use powder, but not as yummy! Also, it has a very very long counter life!)

Hot Pepper sauce to taste. (I put in a couple dashes into the base mixture, then a couple more when cooking to taste)

Optional: add some Sesame seed oil (maybe 1/2 -1 tablespoon?) Can substitute it for some of the olive oil)

Ok, blend the above ingredients for 30 seconds or so. (if you don't have a blender, make sure the ginger and garlic is shredded up real fine or grated. Perhaps reduce the ginger by half)

Cut up 1 pound of very firm tofu into very small cubes. (drain the tofu, I used a package that seemed to not have much water in it) Set aside in bowl, add 1 can of baby corn, 1/2 an onion and 1 can of pinapple tidbits (with the pinapple juice, don't drain). Poor blended sauce over it, mix it up, let sit in fridge, (I let sit for 5 hours) to season the tofu. I think 3 hours to overnight would be sufficient.

Take mixture out of fridge, place in pan. Mix in your stir fry veggies.
(the tofu will give the sauce a milky colour, this is ok)

I typically use what is on hand, almost always frozen broccoli and carrots, with one green pepper. I often add in some green beans, snow peas, or bean sprouts (the sprouts right at the end) if I have them in the house.

Frozen veggies save a lot of time, and often are fresher and more cost effective then their produce section counter parts!

Ok, so you cook this up until the veggies are as you like them, feel free to add more soy sauce, oils, or hot sauce to your taste.

Cook up a pot of rice to put the stir fry over. Any kind of rice is good.

Top with sesame seeds, sunflower seeds, or almond slices / pieces.

And that is it!
Enjoy!

It may sound complicated, but it is forgiving, if you don't like / don't have one or a few of the ingredients or want to make substitutions, it should still work.

If you are not using tofu, or like the taste of plain tofu, then there is no reason to do the fridge step, just add all your stirfry sauce stuff + pinapple and onion to the veggies while cooking.

After a couple tries, it becomes very easy to make!

They come in different varieties, I should have mentioned that...

basically they are a stuffed dumpling, they can be filled with sauerkraut, (not my favourite) or just a potatoe and cheese mix. Those are the "standards". Athough Potatoe and onion, or potatoe and bacon are popular too. when I make my own, I put jalapenos in them with potatoes and cheese. It is time consuming to make your own though... and takes awhile to get used to making them...

I just thought of another recipie we really like is a Wonton Soup.

It is also cost effective and easy enough to make. We find that one package of wrappers will make enough to feed a family of 5, with leftovers, and it is the main course.

No 'E' in potato. ;)

I can eat pierogi but just about. Some Polish sausages can be OK too but they are very heavy and stodgy so you always feel like you need some fruit afterwards!

I think I am living in 1984... someone just makes up their mind that we are going to spell words "differently" from now on, or maybe they no longer exist... compound this with my Spelling LD, the fact I am Canadian taught under a UK spelling regime, (not very successfully) but heavily influenced with American print media, and I think I am just plain FUBARed... Polish sausages can be a little gross... I much prefer the Ukrainian Kolbassa. But you are right, some fruit for desert is a good idea with either, they are very heavy. My mother grew up in a northern community, fresh veggies where a rare commodity much of the year...

I like an almond desert Tofu topping some cut up fruit, very good!

My kids love 'loaded' potatoes.

Bake the potatoes in the oven. When they are cooked, cut them into 4 - but not all the way through.

Pour baked beans and grated cheese on top. Put back in the oven for a couple of minutes until the cheese melts.

Yummy! You can serve with a side salad.

I'm vegetarian, so this is a great meal for me too!

Thanks! I don't think I've ever served anything like that to my family. I'll give it a try.

I do a Ham & Spinach Quiche

1 pie shell (I buy xtra lg) (I bake for about 7-10 min first)
5 eggs
about 2 cups grated cheese (my fav is colby jack)
1/2 a small box frozen chopped spinach
approx 2 cups chopped ham
2 TBSP flour
3/4 c. milk
some chopped fresh rosemary (optional)

mix, pour into pie shell, bake at 375 for 40ish minutes (after 30 I sprinkle some cheese on top)

You can use other meats but I don't like them. Plus, the ham seems to go good w/spinach (which we use to boost iron levels for Sport_Rulz).

That sounds really good! Do you just put the eggs in raw?

all of your ideas sound great !
too many fussy eaters in our house to make mealtime anything but frustrating......they won't eat casseroles because " foods aren't meant to touch". son is a vegetarian, and the only proteins daughter will eat are hot dogs and chicken nuggets.....other son will eat any meat put in front of him, but won't eat rice, most fruits, most veggies. the only dairy he'll consume is milk , american cheese and cheddar cheese. hooboy.
usually i end up making meat/soy , potatoes or pasta, and some sort of fruit or veg.
two of the few things i can get everyone to eat are: brown-sugar apples and macaroni and cheese. the apples are easy~ jsut melt butter and brown sugar in a saucepan and add peeled, sliced apples. let them simmer until tender.

The apples sound good. I never would have thought to make them on my own, but I've had them at restaurants and liked them.

That's one picky family you have. My kids are somewhat choosy, but nothing like that. My daughter comes close, though. When my boys were younger, they thought that home cooked food was only for people who couldn't afford to buy pre-packaged. Whenever I cooked something like mashed potatoes, they'd say, "I want the real kind that my friend's mom makes from a box." :lol:

sounds JUST LIKE MY KIDS!! ! I feel like most nights I make 2-3 different dinners! And is is always the same! I can especially relate to the casserole thing, and we have to either get my oldest a new spoon/fork in between foods or wash it because it is "dirty" now. My husband's grandmother made the horrible mistake of giving him bacon once (after I TOLD her he wouldn't eat it) and this threw him into an almost rage and he told her to NEVER EVER give that to him again, and tacos apparently are just as bad (because the food touches) :)

jaleb~ HAHAHAHAHAHAHAHAHAHa..........I thought my family was the only one who had to have a seperate utensil for each course ! I've tried telling them to lick the spoon/fork before dipping into their next course ( ie; eating veggies with a fork thats just touched macaroni and cheese ). oh, the looks i get !
