I like the idea of video games better than actually playing

I personally can suggest games out of a list of about a bazillion different things of all difficulty levels (some of them where you choose a difficulty level in-game), but I'd definitely need some more specifics here (as would anyone else here, probably). Though, my suggestions would be mostly on PC. Unless you're good with older games too... I'm not too up-to-date on recent console stuff, because bah, mostly knowing just the Wii U (which has been great), but I know *alot* of PC games of all types. All types that arent sports or RPGs. And I know alot of older games, going all the way back to the really ancient ones.
It does sound though that, for now, you should avoid competitive multiplayer. Co-op might be fine, though it depends on the game (not a game type I can suggest, I mostly do competitive) and depends also on if you have anyone to play it with. If you're starting out with kinda a sour mood, playing co-op stuff with randoms is.... not going to help. This is one reason I do not do so, heh. Nobody I know is into the sorts of games I am, so.... no co-op for me.

Like I mentioned before, I feel kind of like I'm caught in between two extremes that gamers are expected to conform to; you have your CoD kiddies who play challenge-less on-rails shooters which focus more on graphics and exposition than gameplay, and then you have your masochistic gamers who play stuff like bullet hells, "I wanna be the guy", etc. Myself, I like games that offer a challenge and don't spend too much time explaining the story, while still being somewhat forgiving. I like having a structure of sorts, but I also don't like being lead by the hand. Open world games bore me, and cinematic FPS don't give me enough freedom to do my thing. Really, I'd say arcade style games are my favourite... Aside from the difficulty.
Also, cloudflare has been acting up and I'm on mobile, so it's been a real pain in the rear to post this.

Games you might enjoy, might be hard to find these titles but I am sure you can find them on ebay.
Star Wars: Rogue Leader (You'll need a Gamecube or Wii)
Star Wars: Bounty Hunter
Star Wars Jedi Outcast (Challenging encounters but half way through you can heal)
Star Wars Republic Commando
Star Trek Elite Force II (Hard is the most sane difficulty)
Outland (Challenging, not over the top hard, little story)
Quake II
Return to Castle Wolfenstein (Challenging, not over the top hard)
I'll have to think of more but those games have sane challenges, I play most of the above on the second to hardest difficult and I die once maybe every other level.

That's sort of what I was thinking, actually. It seems older games are the only way I can find a balance of difficulty and forgiveness.

I remember playing Rogue Leader a loooong time ago, wasn't very good at it, but I could probably do OK at it now. Quake II basically reminded me of Doom, but with blander environments and less enemies. The others I haven't really played, but I could probably give them a shot.
