You used to be able to play sequel games on the same console like the Sonic or Mario trilogy, but now they only come out with a sequel when the new console comes out, which is right after everyone has bought the old console, which then becomes obsolete while the game companies make themselves even richer with the new and even more expensive. The Wii U had been out for quite awhile. It's been years (Ive had one the whole time). Actually, looking it up, it's been SIX years. With sales of that falling off now, and having not been that good from the start, it was absolutely time for a new one. If anything, it was probably time for a new one a bit sooner than when the Switch actually showed up.
Making a totally new console takes ALOT of effort... no company is going to put out another one BEFORE they've milked the previous one for all it's worth.
But also, sequels come out when the developer decides to make them. The reason why there isn't a new Smash constantly is because Nintendo doesn't see the need. One Smash per platform. That's how they've always done it. Wheras other series might receive like 5 sequels on the SAME console. Nintendo, very specifically, isn't a big fan of that idea, not to the degree that the others are.
But also, compare it to the norm. With normal fighting games, you get the game, and then you get like 50 more "sequels" over the next couple of years, each of which is only incrementally better... not like, huge improvements, just maybe an extra character or two and some changes. And DLC.
Smash just outright starts with 70 freaking characters. Instead of dragging out the whole thing over multiple releases (like most publishers do) Nintendo simply smashes all of that into a single giant one. I dunno about you, but it seems a lot better to me to give Nintendo $60 for this game and it's monstrous amount of content, than to give Capcom $300+ over time in order just to stay up to date with their constant iterations (and the greed factor).
As it is, I normally agree with you on the console bit... I don't do them much either. Mostly a PC gamer here, and I also normally never touch AAA games at all. But I can say this: Nintendo is the ONE big company that hasn't become corrupted (though they are still quirky). That's why I own a Switch at all. Because I know they'll put out GOOD things, instead of GREEDY things. So far, I haven't been disappointed.
The other two however... yeah, they can go jump in a lake.
I have realized something here about these games, they are all the same but they are just basically upgrades. They add new levels, add more characters, add in new games, features but I notice they will have all the same levels and characters from the previous SMB games, same as for the music for each stage, they have have added in the DLC from the WiiU/3DS.
To make up for all this, they will add in something new like spirits. To me that is like collecting cards. Instead of trophies, it's cards and they help you beat components.

They're fighting games. It's always like that.
Well, sort of. With other fighting games, they'll try to sell you a whole new, full priced game.... that adds like 2 characters and nothing else. Actually the worst one I've seen (which was in the Blazblue series) cost full price and added ONE character and nothing else. The fighting game genre has been notorious for this for many years now.
Smash typically adds ALOT of stuff, but also bothers to update older stuff (normal fighting games usually only make minor balance tweaks) including tons of underlying engine stuffs.
Though the absolute worst of all of them is still Street Fighter right now. Want the entire game? All the content? Better be willing to shell out over $250 for it (and then it STILL wont have as much content in it as Smash Ultimate does). Ridiculous. Just ridiculous. I'm so glad I never got into that series.
