I got a bit further over the weekend. I just got to the Catacombs of Carthus, and don't think I left anything undone behind me(not playing with a guide for the time being). It seems to be growing on me a bit more now that I can start playing a bit more how I'd have liked to from the start in having more levels and equipment. It seems with there being less bosses, that leveling up has come much slower. It's only now that I'm starting to get enough souls from enemies to actually concern myself with returning and grabbing them after death.
I did get the Greatsword lying about in Farron Keep, but am now wondering if I don't like the Wolf Knight's Greatsword better, at least until I can find a second GS to power stance. It's much faster to swing like the claymore, but has some interesting quick and acrobatic special attacks that use the skill/magic bar that I can see getting creative with. I also like the running slash of the wolf one better, as it does a radial sweep, unlike the GS downward cleave, so I can run through dark doorways and do the radial attack in case something's inside to the right or left preparing to jump out at me without having to slow my pace to roll for the GS' radial sweep.
As for the level design, it does seem more linear, but I'm not sure it's not just because the areas are so large that they don't seem to meet together in as many areas. The areas do seem to cross in certain places, but usually with some sort of "point of no return" drop. I do like the vertical nature of many of the levels though. It allows me to get creative with my bow, or get use of the spell spook and jump off ridiculously tall structures and sword plunge into big bad things.
