Skyrim and weird fear.
That being said, Bethesda also has a huge problem with their world-graphics engines and the way they show depth and color perception. Fallout series and Elder Scrolls have a very high incidence of people complaining about the game making them sick or dizzy because of the multiple 'fake lighting' sources (areas in the world are lit where there is no light source to illuminate them) and over-use of bloom effects (bloom=that effect that makes things glowy/fuzzy) to make up for graphic engine deficiencies.
In Skyrim you can see examples of this in almost every cavern and dungeon.
I downloaded a mod that fixes the fake lighting issues as well as the bloom effect and I no longer get sick or dizzy playing it. Ok not true... the game's 1990-style float-above-the-ground movement, non-existing animation gets me at times. But aside from that im ok.
In your case, lower the music and the 'ambient effects' sliders in options to near minimal and the noise shouldnt trigger anxiety issues. Download the lighting fix mod (its on TES nexus top 100) as well. The game will be darker (you do need the illumination spells/potions or khajjit night vision to see in many places..but hey thats immersive and COOL) though so be warned.
Since then I only have one weird fear while in Skyrim. That is that I can be out hunting little rabbits for food and pelts and have a MF'ing dragon nab me in the neck and toss me into orbit. ><
My view on Bethesda games; if I don't like something, I'll mod it till I do. The one exception to that rule was FO:NV which was an abomination.
If you have an NV card you can turn on SSAO - http://www.skyrimnexus.com/downloads/file.php?id=31, it's not as good as HBAO but will make a big difference. As Dantac said, go to www.skyrimnexus.com and you can download a plethora of mods to augment your Skyrim experience.

If the music is a big part of what's bothering you:
1) Under "Settings -> Audio" or something like that, in the esc menu, there's a separate volume bar for music.
2) Changing the music to your own files in Oblivion was extremely easy (just add files to folder). It looks like it's a bit more complicated in Skyrim, but if you want to try it, you can google "skyrim change music" or something to that affect. It looks as though the Creation Kit, when it comes out, will add ways of doing this more easily.
In general, though -- I find that followers help a lot with any and all creep factor, particularly the chatty ones (I would suggest the Vilja mod, were we discussing Oblivion), as does saving frequently, sneaking a lot, and turning the IRL lights on.
If a lightened mood in general would also help, the Skyrim page on Facebook recently posted a link to a mod to turn all dragons into My Little Pony pegasus-things, and there are a probably a few mods to brighten up (i.e., oversaturate) the world at large if you browse the Skyrim Nexus. You can also remove any dragon-related stress by avoiding the main quest, as random-encounter dragons don't show up until you defeat the quest-dragon at the tower outside Whiterun, if I recall.

ME TOO ! I actually stopped playing for a while cause the dungeons and caves were too scary.
What really helped me, and I am glad I gave it a second chance because it's fun now, is mods.
Like some replies say, a lot if it has to do with sounds, but to go one step from lowering the sounds, I got a mod called SkyRadio - it lets you put your own music into skyrim and you can turn it on and off as you like so I put lots of happy cheerful instrumental music to play during the dungeon parts and it makes SUCH a difference!
The other thing that's good is to have a follower in those parts - I like a mod called Inigo he's a Khajit and he provides comic relief and is a lot more talkative, and is good with traps stealth etc.

What? Seriously? That's the biggest load of BS I've come across all year, I think. Demons affecting your mind just because you play a game with some occult themes in it? Give me a break. And I suppose the whole Bloody Mary thing is real, too, then right?

As for the fear, I don't have it myself at all, but I figure it's a combination of agoraphobia coupled with the game's ambiance. Bethesda's good at setting a mood with ambient sounds and music, and Skyrim's no exception.
.....pretty sure what he said was just a figure of speech. I seriously doubt the guy ACTUALLY believes that real demons live in the game or something. What he means, likely, is that if you're playing all these games with occult themes, your mind might get a tad focused on them even if you dont realize it. Something like that.
