What is the character you usually create when you can choose
I started my characters as sci but mothballed them after the constant, blatant science nerfing that took place to make tacticals the milk cows of the game.
Sci used to be perfect for what I liked. Debuffing, winning through manipulating the environment, etc.
If you like RPG's Fnord you could look into a classic MMO that is still running: Final Fantasy 11 Online. You'd enjoy the Red Mage class.
A truly good game makes all classes balanced. Each have advantages but none is "best" once you learn how to master each class' skills.
The down side with a game like Fallout/Fallout 2 is that it made no sense to play a dumb character (although there were some classic moments you could only experience that way) because you knew you'd need to have high skills to GodMode the game. I give those games credit for letting the player have the freedom to role-play as they saw fit (and making real distinctions of the choices as compared to how they handled Fallout 3 and New Vegas).
Everyone I have convoed with on Fallout builds all have said that they max out their INT. The more skill points the merrier.
I tend toward the heroes.
In both incarnations of Knights of the Old Republic, I always wound up maxing my Light Side points, without even trying. It was hard when I tried to play Dark Side - I always felt like such a jerk.
In the Mass Effect games, my Shepard is always a Paragon (and usually a Soldier, mostly because I like using sniper rifles. Fair fight? Who said anything about "fair"?).
I have one Klingon character in Star Trek Online, on a secondary account, mostly to experience the redone early levels (Klinks used to start at lvl 20, and you spent your first level running around First City on Qo'noS meeting people you'd never talk to again; now you start at lvl 1 as third officer of a B'rel-class frigate, and become captain after finding out the current captain is a cowardly traitor). Other than that, I play Federation or Romulan Republic, and my Rom, Nniol tr'Keiniadh, is devoted to an open, honest Republic, leaving the tricksome ways of the Tal'Shiar and the old Empire behind.
My first character also tends to be as close to me as I can make in the game system, modified to be a viable character in that system. My personal avatar in Champions Online is Strongarm, who is older, balding, wears glasses, and uses the Behemoth Archetype - massively strong and damage-resistant. He's not as chubby as he should be, because you can't make a fat superhero in that game (yet - we're still pushing for it). In Star Trek, it's Vice-Admiral Jonathan Sills, commander of the Odyssey-class USS Hans Asperger (all of his ships have been named for Terran scientists).
Oh, and the majority of my characters are male. In fact, the only female RPG characters I have right now are Rear Admiral T'song, a Vulcan science officer (STO), Blackwing, a Night Avenger and former sidekick of Spider-Bat (CO), and Jane Shepard (ME).

The Organians answered," what are you defending?. Death on a planatary scale?" Kirk grew silent. * However, the klingon responded,"pity, it would have been glorious! "
