The hardest boss might be the one at the end of the first video game I ever won. Mecha Spongebob at the end of Battle for Bikini Bottom. Don't if its still considered hard, but it was for me when I was little and just starting video games. Or maybe I should go with the bosses from halo 2 legendary.

Although is is probably not as hard as some old school bosses can be, I remember having a lot of trouble beating Sephiroth in Kingdom Hearts. Took me hours.

It took a very long time to get good enough to even stand a chance of even reaching these guys, let alone beating them. A good year of constant practice.

The scary thing is, these guys are nothing compared to the difficulty of that mode in the sequel.

I haven't found any console games I've played particularly difficult

Mr. Freeze from Batman: Arkham City. He is an absolute pain to beat on New Game Plus mode. Unlike the standard difficulties, i was low on health and needed to do at least 10 offensive maneuvers to finally topple him.

The easy takedowns such as from behind, using the floor grates, glide kick, hanging from the ledge, disrupting his suit's mobility and the electromagnetic generators was easy enough, but the other four were even harder. Definitely the highlight of Arkham City for me.
