I liked the versions for the NES and SNES.

I've only ever played the first one and I must suggest you steer clear. It is incredibly difficult Dx

Easiest ones are probably the DS ones (though I haven't beaten all of them yet), the GBA ones (except for Circle of the Moon), and Symphony of the Night.

Rondo of Blood is also pretty easy if you play through it with Maria.

Try this if you only have a Nintendo GBA and DS.

You definitely need to play Symphony of the Night. I haven't played every Castlevania game, but the ones I have played, I've enjoyed a lot, but they can be difficult. Plus, they always have awesome music! And even though it's completely different, I really liked Castlevania: Lords of Shadow.

I heard that one didn't feel like a Castlevania at all. More like God of War.

My suggestions, being I love Castlevania.

NES
~Castlevania
~Castlevania III

SNES
~Supercastlevania

Playstation
~Castlevania: Symphony of the Night

Gameboy Advance
~Castlevania: Circle of the Moon

Playstation 2
~Castlevania: Lament of Innocence

Yes, entirely different, but I liked it.

I got the PSN platinum trophy for "Castlevania: Lords of Shadow", and all the trophies for the two add-on chapters that didn't actually count towards the platinum.

By the way I think it's more like a classic Castlevania than the other 3D games in the series. One reason for this is the fixed camera viewpoint.
