They're all canon and eventually mix together in Hyrule Warriors Deluxe Edition paving the way for Age of Calamity and eventually Breath of the Wild 1 & 2.

The original Hyrule Warriors is non-canon. Age of Calamity is canon by way of it being an alternate universe. You don't have to follow a timeline branch down if you can't pick - play in a different order like release order (if you can) or order of interest.

Theyre all canon and there aren't many commonalities between games in the same timeline in terms of gameplay. I would just play the games you want to play most without worrying about the timeline and then go from there.
