PVP: Player-versus-player combat, as opposed to fighting monsters. If the combat is between members of the same side ("faction" - Alliance or Horde), it's usually a duel, fought for honor points, and no one dies. Combat between members of opposing sides can apparently be to the death. (At least, the last time I entered Goldshire after seeing an announcement that it was under Horde attack, I saw several dead Horde lying about...)
2V2: Similar to PvP, except that it involves two players per side, and is fought in an arena. Many honor points can be at stake here.
One important note: If you don't care for PvP combat, you can join a server that only supports roleplaying; also, if you find that for one reason or another you are on a PvP server, you can disable PvP combat, and others will be unable to engage you. (I once had a couple of Horde dancing around me for almost ten minutes once, trying to get me to fight - maybe if they'd selected Common, rather than Orcish, for their in-game language, I might have understood their taunts...)
A couple revisions:
2v2's are not fought for honor, they're fought for arena points and arena rating. The higher your rating is, the more points you get, and the better arena gear you can buy.
pvp- always to the death when its with the opposing faction. also, you only get honor when your opponent is the opposite faction.
And as for your side-note, if you're on a PvP or PvP-RP server, you are always flagged for pvp combat in contested territory, and you can only unflag in your factions own territory, or in shattrath city.
Only on a PvE or RP server can you unflag/flag any time you want, any place you want.
My druid is on a PvE server, and I hate it >.<, as soon as I stopped raiding on them and started raiding on my hunter on a PvP server, I quit playing my druid.
