IMHO, Genesis describes the Jewish creation myth. It's not really that symbolic. I do think it's possible to be a Christian and believe parts of the Bible are not factual, so it doesn't matter except to people who believe in Biblical inerrancy (which is unfortunately quite a lot of people).
I know Christians from churches who don't teach Biblical inerrancy that still believe Genesis is literally true, but that's because they're dumb rather than because they're Christian.
Islam has a bigger problem in that Quranic inerrancy is central tenet of their mainstream beliefs.

I have a version of the Holy Bible called "The Living Bible" that makes the first book of Genesis sound much more like a symbolic interpretation of the theory-of-evolution. I think it was designed for gullible Christians that take the regular bible literally. lol
For example, god creating "Adam and Eve" just means that god created various male/female humans. Not two individual people by those names.

How else can atheists be convinced that the Bible actually promotes evolution?
Symbolically isn't going to cut it. As you can practically argue for anything as biblical by resorting to symbolism.

I do think the bible was mostly intended to be read as a literal document (I'm an atheist), but some parts of it were probably intended to be read as symbolic.
Christians have the extremely hard task of working out which is which; that's why some take the easy way out and claim that it's all meant to be taken literally. I'm glad my belief system doesn't depend on interpreting such a difficult text, any more.

And in this 21st century, there is NO EXCUSE for anyone who has access to the internet to have such abysmal ignorance on this subject. Gravity is explained by Newton's Laws.
Where Charles Darwin's theory of evolution falls down is when the attempt is made to irrefutably directly link Homo Sapiens-Sapiens with the varieties and ancestors of Archaic sapiens which we displaced.
Which is to say Darwin's theory is correct, except for Homo Sapiens-Sapiens.

Some of it was probably just mistakes due to the lack of knowledge at the time. For example, in the story of "Noah's Flood" the whole world was supposedly covered in water. However, in actuality it was probably just the particular area of the world that Noah lived in which was flooded, but he mistakenly thought the entire world was covered in water just because he couldn't see beyond the horizon.
