Eliminating gluten was the simple "change in diet" that increased my iron levels and cured the anemia symptoms including fatigue/insomnia. (A healthy gut is better able to absorbing vitamins & minerals.)
Unfortunately by the time I got around to see a Dr, I had already been gluten-free for a few weeks, therefore tests for celiac were inconclusive. If I could go back in time, I would not self-diagnose, but rather do a "gluten challenge" (eat lots of bread & pasta leading up to the test) for more accurate results.
At this point though I am happy with the results so why would I switch back?
Also I understand it is possible to be sensitive to gluten without clinically having celiac disease (a specific auto-immune disorder).
Sorry to ramble but it is a "special interest" for me.
