And these kinds of dilemmas that make it challenging or uncomfortable to ensure you get the same barber every time are exactly why I don't like the walk-in system that most barbers use.

In the situation you described, the other guy could wait for the same barber I use and let the person behind go before him if he felt so strongly about it. What he does isn't my concern. All I'm worried about when I'm in a barber shop is getting my trim done the way I want it. I'd rather risk offending someone or coming off as rude than leaving dissatisfied with my cut.

It's probably going to take about 5 or 6 months to fully get my beard back to where I'm satisfied with it, and to me that's a big deal. If I had to risk offending 100 barbers every time I got my haircut to ensure that I never have to go through this again, that's what I'd be doing.

Where I come from the hairdresser usually senses if you're not the chatty type. That's why the hairdressers usually have loud radio/music in the background so that it makes it less awkward if you don't wish to chat. I like to relax whilst having my hair cut, as it's like a massage to me.
