Mentality always changes too much between days

I don't understand this at all and still don't even though I've been used to it for years. How I feel about something one day often seems to change the very next. One day, I feel like starting a YouTube channel and contributing to it a lot, but then the very next day, I don't and even delete the channel altogether.
This is just one example amongst many. How people feel about things usually change gradually, but a lot of things seem instant. Arrrgh why?

Talking to a professional did help before, but I was discharged a month before the pandemic began. I haven't spoken to one since then. I do feel depressed sometimes, but not much.

Stress from the pandemic could be a factor, have you thought about scheduling another round of therapy?

The pandemic hasn't affected my personal life so much, but seeing it affect so many others is so saddening. It's so unfair to so many people.
I considered therapy again after society goes back to normal because video chats feel too scary for my social anxiety.
