I told my uni today that I wanted to leave, due to many factors.

However they suggested I went to the doctors to see if I have depression as I shouldn't be making such a big decision if I have.
But how do I make the doctor see that I'm not just having pre-exam nerves and want a concession as this has absolutely nothing to do with it?

You shoud take their advice. See the doctor and just be honest about how you feel, mention that you are AS and if you've had similar feelings before the exams started. It sounds like they're trying to help you out, which is a good sign.
