Carolina has 3 styles;
1) Western style, tomato-based
2) Central NC - vinegar, pepper, 'pig in a blender'
3) 'Eastern' NC (east of Greenville) sort of a mustard-based, something in common with South Carolina version.

NC has a tradition of something called a 'pig-picking', which consists of an entire pig stuffed in a barbecue 'pit' (usually towed behind a truck, and can hold an entire pig). You open the cover, and 'there it is'...you pull pork off of it. Not for the squeamish...;)

Raised on Texas briskitte, specifically a gas station barbecue in Waco, TX (halfway between Bush and the Branch Davidians...don't mess with us...;)

There's no subject more people will disagree on than barbecue...;)

I've never seen the Mustard based sauce in Eastern NC, just the vinegar/pepper stuff.

Kansas City barbeque is the best in the world.

Carolina bbq just taste like vinegar.
Texas bbq- just because it moo's doesn't make it barbeque.

I need to give ribs a shot sometime. I mainly BBQ chicken, pork, steaks and roasts. A BBQ roast is awesome.

My favorite quote is from my sainted, dear, 5' tall, sweet grandmother, rest her soul...

She's from Texas, and we took her to an NC barbecue (the pig in a blender kind), and let her try it...

after a bite or two, she pushed it away, and said "This is dog meat"...;)

I don't know from Eastern NC barbecue, but the newspaper had a 'purist' who insisted you couldn't get 'proper' BBQ west of Greenville...;)

Actually, a couple decades ago, the US government tried to establish an 'official' description of barbecue...as far as I know, they're still not ready yet....;)

Could you clarify "pig in a blender"? Seriously, i have no idea what that means. :) Sounds like sausage or ground pork?

Funny that King of the Hill should be mentioned. Temple, Texas (the first sizeable town north of Austin) is the inspiration for Arlen.
