I could imagine the Texas Panhandle getting snow, but would be very surprised if it got as cold there as it does in MN and ND in winter. I always look at satellite outlooks in wintertime and MN and ND with exceedingly rare exceptions is the coldest part of the lower 48.
history_of_psychiatry: while I personally enjoy Seattle very much, have you considered Oregon? My brother in Seattle tells me it doesn't rain as much in Portland, but still has a lot of forests and Mt. Hood nearby. I don't have much personal experience with Portland (only driving through it a few times), but ostensibly Seattle and Portland may be fairly similar. They're close to each other too.
