Tomatoes, carrots, celery, cauliflower,broccoli, potatoes, onions, pink beans, black beans, cilantro... to name a few :lol:. But I haven't been eating as well the past day or two.

The only vegetable I would eat in any form as a kid was potato ...and the ocassional lettuce leaf.

I absolutely love vegetables now...all of them. But we have pretty high quality produce here and I love to cook so I could be lucky.

The last vegetables I ate were last night...some cucumber, tomato, lettuce and grated carrot.

some are not technically vegetables:

cellery, tomato, avocado, lettuce, green bean, red bell pepper, mushroom, broccolli, peas, carrot, cabbage, a couple types of bean, water chestnut, mac nuts, pepperocini, cucumber pickle

I had green beans and carrots today with my dinner.

I love vegetables. My favorite are brussel sprouts. I like just about any vegetable, as long as it's fresh and not overcooked. Canned vegetables are a crime. I nearly threw up when I had the green beans at a restaurant called Cracker Barrel. Not a fan of potatoes, either.

I made a sort of stew last night with potatoes, cabbage, bacon and some other stuff and I had the left overs with some bits of chicken today. Pretty nice actually, I got the recipe online somewhere I think.
