Thank you, cooking is my go-to when I'm stressed :)

If you mean the last picture in the post, I'm afraid that's the Carpaccio so the red stuff is raw beef. The best cheese for it is Parmesan or Pecorino - I used Ruccola, Pecorino, toasted pine nuts, sun-dried tomatoes and a very light honey and mustard vinegarette.

For the immune system, I suggest lemon, ginger, garlic, turmeric, bell peppers, chillies, broccoli, almonds. coconut milk and berries on a regular basis: you can make a lot of salads and teas, I always have a large quantity of homemade lemon and garlic tea in my fridge, sweetened with a bit of raw honey and green tea or Matcha are good too. Fermented stuff also helps - natural yoghurt, pickles, sourdough, Kombucha or Kimchi.

This is a great recipe for broccoli that even haters absolutely love Roasted broccoli. You can skip the Parmesan if you want, but keep the lemon juice, it makes a big difference.

Fresh air and regular exercise if possible also help - I almost never catch colds even when half the people at work have it.

Not sure about the kidney stuff: did the doctor give you a list of recommended stuff and what to avoid.

On second thought, I do make it as a salad sometimes with the meat on top and I'm pretty sure the combo would be very nice without any meat at all, or maybe with some croutons.

Thanks for the list. We know most of those for immunity. Cinnamon also helps with inflammation and infection. I keep a staple supply of teas, lemons, peppers, chillis, broccoli and berries, in particular. For renal disease and Lupus they recommend no alcohol, low sodium, high calcium, and high Omega 3. Garlic and peppers or nightshades can cause flares but who can resist peppers?

I guess my brain wanted it to be tomato paste for some reason :lol: (hm might be a new food experiment in my future). I like the sound of the other salad though (sans meat), so I'll have to try that as well!

It's great that you have such a productive and delicious way to de-stress! I'm more of a cook to eat type (because cooking can sometimes stress me out), but I like finding recipes to try. It's less stressful now that I have Fey as a cooking buddy, but all of the steps can be overwhelming at times and it's hard working in a small kitchen. I'm betting you have a magical kitchen for making all of that in!

What a wonderful thread!

I used to cook a lot. I used to bake breads and biscuits in a wood fired oven. Nothing beats that. That was ages ago.

Then I had a period of gourmet cooking and dinner parties. (Was married to Frenchman for a time.)

I bake a mean key lime pie and it is requested at all gatherings.

My latest is to find the best ways to cook venison. (I hope I don't offend anyone with this.)

There's wiggle room on the sauce type and can probably double the amount of cauliflower the recipe lists unless you really want to drench the wings.

Your food is presented so professionally and looks so tasty (except for the raw beef :eew: :P). I am only a recent convert in the last two years, so I can still appreciate good looking meat :wink:.

Magna is a great cook and he grows his own stuff too: he recently even build a new greenhouse by himself. Karamazov is also very good, grows his own veggies and is mostly vegetarian. Both very smart, polite and articulated on top of it.

I really enjoy cooking for people with dietary restrictions, the challenge gets you out of the routine and makes things more interesting. We make a bunch of vegetarian dishes anyway just because we like them.

I have a friend who hunts and brings me some once in a while. I usually marinate and tenderise the meat and make steaks, roast or something like Saltimbocca Alla Romana.

Tonight's dinner was pasta and veggies with olive oil and basil. I also tossed in some green onion cheddar cheese chunks. Dessert was chocolate mousse. I'm most excited about the pesto bread though. Since covid I haven't been able to find yeast and I think i was having homemade bread withdrawal.

Tonight I start on the bagels so they'll be ready to boil and bake in the morning. I think I'm gonna do cheddar with basil, garlic, and oregano. I'll probably make some swiss with dill too. I'm pro cheese on bagels. So happy about those stupid bagels. :lol:
