Why didn't he take the license plate off 
It would attract police attention sine it's illegal but so is excessively speeding & outrunning the police & having the plate off would make it harder for police to identify him.

I think maybe on time a traffic camera got his plate and cops pulled the camera. Other than that I’m sure certain highway cops have figured out who he is when they spot him, his bike/gear etc even if they can’t read the plate if they remember who he is they just look him up in their notes and head to his address hopping to catch him arriving home or something.
