When your ear is up against a pillow it distorts sound. I had the same conundrum, it turns out it was the friction form my eyelashes on the pillow case. I thought it was a mouse. I have heard and seen mice scratching. That would support the idea of it disappearing when you move your head. Also when you are alert trying to listen to it you aren't blinking so it will stop, much like a naughty mouse that doesn't want to get caught stealing the cheese.
The heart beat can make other noises because it causes your whole body to move. The more you press up again your bead the more you bed shakes because a bed is like a suspension system. That can cause all sorts of sounds. There are many things going on. You are breathing, expiring, passing wind, etc. Just because you don't see them doesn't mean you can’t hear them.
I've not heard of a pillow that is good at conducting/reflecting sound, most likely it distorts the sound make it sound more alien. It is usually a dampener but when you ear is right up against it you are getting a lot of surface sound. So it can actually be quite loud. Eyelashes rubbing against a pillow case sounds like scratching.
Have you ever tried humming while you’re underwater? When you’re in the bath put your ears under water but keep your nose and mouth above water. Try humming gently. It sounds louder and more uniform. I really like doing that
