Mmm, well, if you're happy to eat fish, it's very good for you, cheese as well. Then loads of cereals, pasta, rice; veggie curries are good, lentils, tortillas/wraps with vegetables. Spanish omelette (omelette with potatoes, peppers, onions in it) is a very well rounded meal. Dhal is a good staple.

hmm.. cereal... i need to buy more, i think my cereal has been sitting there for a year now... O_O

Most Americans get more than their daily reccomended amount of protein without eating meat. You only need to worry about vitamin B12 if you're raw food vegan.

Do you drink milk/eat eggs?

Beans are a great substitute for meat in most places.

I agree with you. Tonight I made a spinach quiche. It consisted of eggs, cheese, ricotta cheese, spinach, and topped with sour cream. It was delicious. If you want the recipe I'll send it to you in a PM (it's from a book, I don't want to post copyrighted material to the public.)

I went vegetarian a few years ago, but I ended up not wanting to be associated with PETA. The reason for being veggie was that meats, some cheeses, and MSG taste awful to me. Umami flavors are overwhelming. It's hard to avoid these things in a culinary class too. I end up only eating a few things my class makes.

I do eat chicken, it's pretty much the only meat I will eat. I like the texture and it's slight flavor.

I've been a vegetarian since 1993 or 1994. I do find some meat replacements are missing the point but ideal for those who are tempted at the idea of becoming a vegetarian but miss some of the foods.
Vegetarian sausages are one of those that taste very much like pork, but I prefer the ones filled with vegetables really. There are others, but I've had so many sausages (no jokes please) I had enough. "Ok, what about veggies sausages?" uhhh :(

Soy does offer great protein, but I do like my pastry items such as vegetable pies, I could eat them all day. Come in 2 varieties depending where I go, spicy and creamy. Both are just as good. Although spicy looks dark inside and resembles meat and does put me off.

I don't understand meat substitutes. If you want your independence from meat, then just try something different.

I was an ovo-lacto vegetarian for many years for the same reason as you, Kasuki-Chan.

I just ate whatever I wanted as long as it didn't have any meat in it. As long as you eat a variety of foods, you're likely to get the nutrients you need -- no "matching" foods or "replacing protein" required.

Fnord's right about watching labels. You'd be amazed at what items contain chicken or beef products.

You're fortunate. There is a much larger selection of vegetarian food available now than there was when I went "veggie". Quite often at restaurants the only thing available was a salad, and this was back when "a salad" meant iceberg lettuce with a few shreds of cabbage and carrot and a tomate wedge if you were lucky!

I'm no longer vegetarian, but I still don't eat red meat or pork -- too unhealthy.

It's all what you feel comfortable with. Some people use eating one type of meat, to get used the idea of eating veggie and than give it up. Others don't feel fish is a big issue and eat it. There are tons of different type of vegeratarians out there depending on what you eat and don't eat.
