mmmm. cheese. I do realize that a lot of cheese has been corrupted by Pasturization laws in the states, but we still have a few "decent shops here and there. My favorite is the pungent, yet creamy and slightly crumbly stilton. Still, those of you in the uk and europe should feel proud of many of the artisanal cheeses found there. Most of the regular grocery store cheeses here in the US are more prone to mass productions and tend to be plastic in nature. In fact, most of the cheese of our namesake is a suspension of milksolids, oil, some kind of emulsifier, and anatto coloring. Dont get me wrong, these things have their place, ooh, especially the all american Velveeta. Fat and creamy things taste good, and this stuff will make the most vilest of vegetables into good vegetables. It's designed to melt into smooth, cheesy liquid that can cement almost any incompatible set of ingredients into a nice solid block of 'casserole'. Addictive. Its a rare and special occasion that i get a few cheeses from the local gourmet cheese shops. Ooooh, the port salud! If i get the 'special occasion' cheese, then its dinner, with a neutral vehicle for the cheese, usually of a bread-like nature. We have everyday cheese and special occasion cheese. mmmm. cheese.

I hate cheese, unless it's sharp or really spicy. Maybe I just need to try some European cheese. The stuff that the USA calls cheese leaves a film in my mouth, which needs to be reminicent of something very stimulating in order to not disgust me.

Cheese is heaven :) Morbier, roquefort, washed rind, chevre, valdeon, cheddar, brie, parmesan, camembert, comte, bocconcini, havarti, jarlsberg, edam, ricotta, pecorino, feta, gorgonzola, red leicester, panir, double gloucester, colby, gruyere, manchego, stilton, provolone, mascarpone, asiago, mozzarella, emmenthal, white cheshire, grana padano, danish blue, cottage, swiss, brillat-savarin, halloumi, raclette, port salut omg i'm getting hungry...........

Now i have an idea about what that apricot stilton tastes like. It has been intriguing me since i saw it in the cheese case. Sounds kind of tasty. There is one cheese that i cannot get into..... limburger. It smells like the lower half of someone who hasnt bathed in a few days. Try having that aroma as a taste. I can say i tried it once.

I'm in on the "cheese bandwaggon" -- yummie :D

This doesn't come from strangers -- I've liked cheese for as long as I can remember. On one ocation, this is back when I was 3 years old, I was with my grandma on a shopping trip, which included a stop at the cheese store, to get a supply of my grandpa's favourite cheese (a pretty hefty Gorgonzola). This was one of these places where you can taste a small sample for free, and I was handed such a sample of a fairly mild cheese (clearly the lady in the shop didn't want to put me off cheese), but I indicated it "didn't really taste of very much". After some subsequent samples, we ended up at Grandpa's fave gorgonzola, which I finally approved of. According to my grandma, the lady in the shop was stunned; apparently I flew in the face of anything she knew about kids and their taste for cheese...! :P

WARNING! My choise in cheese, stated below, is NOT for the faint-of-heart...! :wink:

The general rule is the fatty and sharp-tasting the better: I like a "badly" moulded blue cheese -- preferably so "alive" it can almost stand up and growl at me as I try to cut a lump of it!

MMMMM cheese. I love all kinds of cheese, but by far my fav is cherry cheesecake. I can eat a whole pie in one sitting. I like the no bake recipe the best. Unfortunately, I'm lactose intolerant, so cheese does not feel the same way about me. :(
