Why does the guy in waterworld go to all that trouble to convert urine to drinkable water when he could just as easily convert salt water to fresh water?

There was this one snack food thing called Big Texas Cinnamon Rolls. One day I thought "I wonder if these really make you feel like you're from Texas."
I had the experiment planned and everything. The ultimate conclusion was that this is a sham and they do not actually make you feel texan.
