I had to look up Absinthe. It sounds very good, as I quite like anise and fennel.

Anyway, I am most fond of:
Sparkling water with orange blossom water
Sparkling water with fresh lemon juice
cranberry juice with 2/3 water
Water with fresh lemon juice

I do like a good, bitter beer on occasion.
My current favorites are:
Anchor Steam Beer
'Just Outstanding' IPA
