Well, what you could do is slow roast some pork belly (usually 2hrs min), blanch and refresh some finely shredded cabbage, then fry it in some of the residual fat from the pork belly and season with some white pepper. Serve it and the pork belly with some finely mashed potato (use a ricer) made with double cream and butter with some finely shredded spring onion.
A sort of rich restaurant version of an old crappy Irish staple known as Bacon and Colcannon. Trad Irish food isn't that immaginative, frankly. Very simple meat, potatoes and root veg, and breads. Irish history shows that eating was very much about staying alive and little else.
