cheesy salmon mornay with rice.
it is my simple recipe.

ingredients for one person:

salmon bit:
1x220 gram can of red salmon
1 tablespoon of plain flour
1 tablespoon of butter
1 jar of cream cheese spread.
200 ml milk.


method:
melt butter in frypan and then add flour. do not add all the flour at once. just sprinkle the flour into the butter and mix thoroughly with a fork until the mixture has a sheen to it and is very lustrous looking. if there are any areas of plain melted butter left in the mixture after mixing, add a little more flour until no oily smears are left, but not so much as to make it like a paste.
let that bubble away on low heat for about 2 minutes to get rid of the floury taste of the flour.
then start to add milk to it and mix it until it thickens. it can take a few minutes to thicken. just keep adding milk slowly and waiting until it fully thickens. remember you can not add more flour at this stage if the mixture becomes too runny as it would be very hard to beat the lumps out of the mixture and it would reintroduce the floury taste.
so be careful.
stop adding milk at the point where the mixture is a bit thicker than you want. wait for the addition of milk to be soaked up for a while and do not preempt the process.
then scoop in about 3 tablespoons of the cream cheese and mix it thoroughly with the white sauce. wait until the cheese has melted to the point where it is fully combined into the mixture (mix it thoroughly) and then add more milk if desired to bring the mixture to the final consistency you want.

de-bone and take the black skin off the salmon and chop it into whatever size chunks you want ( i generally shred it loosely) and then swipe that into the mixture and mix it through fully.


rice bit:
1 cup white long grain rice.
1 tablespoon finely diced celery
1 tablespoon finely diced red capsicum (red bell pepper in US?)

cook rice for 15 minutes in boiling water, and at the 12 minute mark, add the diced celery and capsicum and boil for 3 more minutes.

serve with salmon mixture on one side of plate and rice mixture on other side of plate.
sprinkle salmon mixture with cayenne pepper.

yum!! !
i usually hate celery but the bitterness is not apparent and the rice has a crunch to it that perfectly compliments the salmon mixture.

probably not healthy, but if you ever try it, you will remember it when you need to eat but are not hungry for anything you can otherwise think of.

it is at least a low-carb recipe, a plus. fats concern me less than carbs.

white rice is carbohydrate in it's essence ....i think i will have to check it.
so is the flour.

I'm used to eating such, my vegan sister turned me onto the non-refined way of eating, for better or worse. I grew up on Japanese style white rice. so it's not like I didn't "kick my heels out" before now. :)

oh well if you are happy with brown rice and it is something you need to do for your health then whatever. go for it.
