Does anyone have a favorite vegetable? :D

A vegetable they use often or eat often in meals?

Any technical-fruit used in a vegetable-way is OK too

How do you like to eat your veggies? Fresh as is, boiled, steamed, baked, fried, roasted, or..?

Well there are way too many vegetables, and I like to mix and match various kinds depending on what the recipe is.

But I guess I really like tomatoes (yes it is a fruit used as a vegetable), because it is so versatile, and can be used in many ways, particularly as a sauce base.

I really like making tomato sauce for spaghetti, and the ways it can be altered, using herbs and spices, etc, to make flavor variations for pasta dishes. I also add tomato to curries and salads, either fresh or sun dried as a herb. I have also eaten tomato in a dessert at restaurants occasionally.

I guess the tomato's dual vegetable/fruit status, plus versatility, makes it ambivalent and flexible in classifications.

I identify with the tomato. :)

i would say my favourite vegetable is probably either..... parsnips or chinese water chestnuts.

i used to love bok choy best of all, but i can't properly digest cruciferous vegetables (lack the enzyme) so lately i am not into it as much.

It's hard to say which one I like best. I eat a lot of vegetables.

Cabbage might come to the top of the list since I notice I keep eating a lot of it recently. It can be eaten uncooked or cooked in many ways. When I'm lazy (which is most of the time), I simply cut cabbage and microwave it. Then I use some olive oil and salt to give some more taste to it. Very simple and tasty. I might use cauliflower and capsicum with it, too.

I also like coriander leaves. Often I have it with onion, chillis and salt. Yum!

I think there are many others I like.

I love vegetables especially:

  • broccoli rabe/rapini --- sautéed with garlic and olive oil.
  • eggplant/aubergine --- Ratatouille, Baba ghanoush, Eggplant parmigiana.
  • daikon radish --- stewed, raw or pickled.
  • arugula/roquette/rucola --- salad with Parmesan cheese and balsamic vinaigrette

It sounds like a hint at Thai cuisine. That is one of the reasons I love it. Because of the fresh coriander. Yum indeed!

I've never been much of a plant eater. Tomatos and Potatos are about the only quasi-veggies that I eat normally. From time to time I enjoy spinach, but that is a rare occasion. I enjoy quite a few fruits and berries, I just can't stomach leaf/stalk type foods, I don't like the flavor/texture and they make me queasy. I'm primarily a carnivore at heart, but chicken doesn't sit well either.
