Here's mine....
PINEAPPLE UPSIDE DOWN PUD
100g self raising flour
100g cooking marg
100g caster sugar
2 eggs
250 g pineapple(fresh or tinned)
250g golden syrup
Mix marg and sugar until fluffy
Add eggs
Sift flour, add to mixture, mix until fluffy
Drain pineapple
Cover base and sides of tin with marg
Line base with pineapple
Melt golden syrup and pour on the pineapple
Pour mixture on top and spread evenly
Bake on middle shelf for 30 minutes at 180c
Check cake is cooked by inserting knife, if it comes out clean then it's cooked
Turn out onto plate
