Why are French sauces so labour intensive

Just whining.

After decades of bbq, Mexican, and Italian-American dishes, Im trying my hands at some of the French sauces (because I love French cooking but have always been intimidated).

Tonight is a white wine velouté to go with herb grilled chicken breasts.

All 4 burners on the stove are being used!
That is all.
