I don't eat GFCF specifically but because I have low blood sugar issues most of my diet is similar. Usually I'll make a meal with the basics of 1 meat such as chicken breast or fish, some rice or potato, and then a vegetable like corn, peas or broccoli. For dessert I have an apple or banana. It's not so much about avoiding food, but eating real food that is actually good for you.
I recommend reading "In Defense of Food", it's not GFCF either but it really comes down hard on things like refined flour and sugar, and it'll teach you better ways to shop.
