This.

If I wait 'till they're finished speaking, whatever I was about to say will have already flown through (and out of) my mind and I'll have started thinking about something else (usually unrelated to the conversation).

I have a lot of trouble telling the difference between a pause and when someone has stopped speaking.
On the rare occasions when I do it on purpose, it's because I have important information that needs to be conveyed right at that moment.

Pretty much everything that everybody said. I cannot determine if they are done or just breathing or I get stuck on something that they said and have something to say and cannot listen to anything else unless I say what I need to.

Shut up, I'm thinking.

It's like, people blithely include details in their stories that I'm not in on, so it's like trying to solve a puzzle with a big missing piece, for instance something like "and then JASON stepped in and started arguing with Don," assuming that I already knew Jason is an alcoholic and was cheating on the storyteller's girlfriend. Thus the story stops making sense, not to mention that I'm abysmally indifferent to Jason anyway.

Slight inaccuracies mess me up too, which plague my ability to understand details of updating an insurance plan over the phone, for example. I have to ask for clarification and I think NTs have an ability to glean the truth from a flawed explanation.

If I'm not doing wind-sprints to try and sew up holes in the information a person's giving me, then I'm keeping a lid on my anger because people often like to long-windedly explain things that are really obvious to me, or repeat themselves.

I often interrupt beause I want to say what I want to say, and don't want to be stopped, or can't wait to say it.

Sometimes I do interrupt people and I really do not want to do interrupt them. It does seem that sometimes I may think they are done talking at a pause or I really want to say what I am thinking.

I interrupt often, especially if it is to do with my interests, If I believe a conversation is heading in that direction, I jump stright in even if it has nothing to do with those interests. I often convince people it's relevant

I interpret pauses in conversation to mean that the other person is finished speaking and it's my turn to talk, but I always wind up accidentally interrupting them, because the moment I start saying something is the moment they're ready to start talking again. This happens in virtually every single conversation that I participate in. Thankfully, people seem to realize that I'm not trying to be rude by interrupting them and the only reason I do it is because I can't pick up on the natural ebb and flow of a conversation.

I've noticed this trait in me only fairly recently, and for me it's the same thing. I notice a slight pause, I jump in, and they keep talking. I also think part of it is that I'm so wrapped up in what I'm thinking that I'm not really paying too close of attention to the other person's cues. It's problematic on the phone too.

This! though in my case, I noticed it a long time ago. It happens less now because I really try to be careful to not interrupt, but that also turns out to be problematic in a group: just as I finally start speaking so does a third person and somehow everyone hears them and not me. I've had cases where I'd try to say the same thing 3 times, each time after carefully waiting for the current speaker to finish, and when it happens the third time I just think "alright, stuff it, it's not worth the effort".

I'm usually the one who always gets interrupted.

I used to do it quite a lot and I am pretty sure that growing up, although NT, I should have been diagnosed with ADD &/ Dyslexia. I think it had something to do with this knee-jerk reaction of saying something while I will thinking about it otherwise I might forget. Anyway, I am a lot better now but sometimes I have to consciously remind myself not to butt in when someone is talking.

I don't interrupt people too often, but when I do, it's because I know that the conversation will shift to a different topic before I get a chance to speak, or I'll forget what I wanted to say. If there's something I really want to say, sometimes I have to interrupt a little bit.

Usually this is only a problem when I'm trying to be charming. (worst possible time for it, I know) There's a rhythm or cadence to stories/jokes that makes them better. So the other person is saying their bit and then I'll interject something, trying to hit the beat just right to get a laugh. Sometimes it works and it's not an interruption per se (more of an aside), and others it's an obvious blunder and I have to prompt the person to go back to their story/joke. (which I've usually managed to ruin)
This is something that is generally only a problem with friends because I'm very quiet around everyone else. I'm more likely to be interrupted than interrupt.

Because they interrupt me before I can finish my thought.

Because I have to get the thought out before I forget/can't say it anymore.

Because I sometimes get confused when the other person is done talking. Especially my parents. They talk about one thing, pause for a couple seconds in silence, then continue on with the same thought! Arggghhh.
