Because it relegates females to a perpetually intellectually and emotionally juvenile state in the mind of society, whereas the use of the term "guy" instead of "boy" represents the idea that a male must intellectually and emotionally mature as he ages.
However it should be noted the persistence of the term "girl" for sexually mature females likely derives from the idea that youth is an asset for females and is likely more a semantic attemp to preserve her value, and thus increase her status rather than demote her status.
Society sees it as a bad thing for a female to age, and a bad thing for a male not to.
In any case, at 38, I think it would be silly for anyone to call me a girl.
