I think that, to her, it sounded like a pun.
You said you were "running" behind (which, to you (I assume), meant you were late in finishing your task list).
Then you said "I'd better hurry".
'Hurry' is often coupled with the word "running", so it sounded like you were gonna literally run in order to catch up to the completion of your task list. The silliness of imagining someone 'running' to finish a list is what made it funny to her.
'Tis my guess, and I'm stickin' to it.
