For example, you could lead with a question and end with a compliment. Like: "Did you use different spices today? This tastes a bit different than usual. Not really bad, kind of interesting actually. But to be honest, I liked it better the way you made it the last time, that was delicious".
I have to admit though that I wouldn't think of something like this in real life and real time

The upshot is, "Never say anything negative."
If it's absolutely horrible and you can't bring yourself to say that it's delightful, say something negative in a positive way like the example above.
If you aren't asked, don't comment.
The ONLY exception is food allergies that cause a life-threatening anaphylactic reaction.
OTOH, this does not apply to other people. In other words, if they criticize your cooking (no matter how harshly), you must graciously thank them for the input and remember it. You must ask them for their preferences and sensitivities, no matter how minor, and meet their preferences graciously.
It isn't fair...
...but the hard fact is that, when you are not socially desirable material, "fair" doesn't apply to how you may ask to be treated.
