Potlucks at work I refuse to participate in, because I don't trust people with making food, dirty kitchens, not washing hands, using expired food, stuff like that. Gives me the heebie jeebiees. I don't like eating food that I dont have control over, I trust my parents when I go to there house but outside of them I make my own food.

Asian food, I can do as long as it's not super spicy but my digestive system has a hard time with it. Some stuff I avoid because of my Acid reflux and IBS. I never liked food pushed on me either

Sometimes "just do it" works, however more often it just increases the resentment one feels.

One technique that works with children is simply presenting them with the food, without any pressure to eat it, on a number of occasions. After about nine or ten, children will come to accept the food and start eating it.

I'm not sure how well this would work trying it on yourself. However, I think gradual exposure is a better idea than trying to eat a whole portion straight away. If you live with someone else, you could ask them to put aside 10% of their meal for you to examine. You could may try a little bit, but more important is getting used to the idea of the food.

Smell it.

Practice cooking it.

Put a little bit in your mouth to get used to the taste and texture, but allow yourself to spit it out.

Eat it with a load of sauce.

Eventually it will become less unusual and more acceptable.

A few times I've just said "to hell with it" and just went for it. A few times it was gross, a couple times I was pleasantly surprised. So its a crap shoot either way I guess.

There is also the gradual approach. If you like one brand of tomato sauce or chocolate, try another brand. If you like rice, mix a few lentils into one edge, and some soy sauce into another.
It is interesting that most animals are able to synthesize all the amino acids and vitamins they need from a simple diet, but humans have to use their brains to obtain a variety of food in order to maintain health.

Maybe I missed something, but I don't think the OP has said why they wish to change from being a picky eater. I guess the presumption is that it's concern about not getting enough nutrients. I wonder what the OP's existing diet is?
